Another Gorgeous Day! Goodwill and FoodMatters....Eggplant Bacon Recipe Revision

I am truly enjoying my time off from work and this gorgeous weather is icing on the cake (raw and vegan, course).
Today my daughter and I had a brisk walk with the dog for about 35 mins. That is about the limit for my dog. Poor pooch, he is a bit out of shape. We do plan to remedy this. Our goal is to walk him daily. He loves it and it is a great time with my girly. Some day she plans to be a Vet. She is constantly sharing something new about the animal kingdom.
She and I are also doing Power 90 Bootcamp. At 13 yrs. of age I want to continue to encourage her to be physically active in a variety of ways.
Tomorrow is in-line skating at the park and a trip to Goodwill, to fetch some bargains. I believe we should be good stewarts of the things we are given. By shopping in thrift stores, I honor God by making the best use out of the money He gives us by providing through my husband and myself. This is also a great way to be environmentally friendly, by the process of recycling instead of filling up the landfills.
I buy work-out videos, kitchen gadgets, clothing, etc. I even found a Brand New, un-opened, "Food Matters" dvd

This is an excellent documentary. I watched it with my kids. Teach them young and keep educating yourself. You can go to their website for more information and to sign up for their newsletter.

What we put into our bodies does Matter. It is what will fuel us today. Our energy level depends upon it, our productivity, our thinking ability, how we deal with stress and the direction we are taking our health. We are examples to those closest to us, our children, our spouse and our friends...maybe even those that are not close, but are in the same social settings. What kind of example are we exibiting? One that leads to health or sickness and obesity? I am not saying everyone needs to be thin, just that we should strive to eat for health. It benefits us and those around us.

So far today this is the food that mattered to me for my health~
a.m. smoothie~raw almond milk, banana, cacao, ice
16 oz green juice~celery, cuke, ginger,lime and liquid stevia
3-4 kiwi

Blended Salad/Soup~I'm gonna call this Coleslaw..it was so good.
4 baby carrots
2 large stalks of celery
romaine lettuce~I loosely filled my small Vita-mix container with this~after the other items
2 T. Tahini
lemon juice
Braggs Liquid Aminos
water to blend

I topped it with 1/4-1/3 c. of Fermented Ginger Carrots & shredded Dulse
and mixed them in....yum, yum, yummy!
Eggplant Bacon, tomato, Vegenaise, romaine roll ups

Lemonade~1 lemon, 1 squirt of liquid stevia, pinch of cayenne and water

Coconut Kefir Sundae~
in a bowl place~ (you may use whatever fruit you like or have on hand)
1 banana sliced
4 chunks of fresh pineapple
Pour over fruit~
cacao sauce~cacao powder, pure maple syrup, agave,vanilla and water to thin
top with raw pecans and coconut kefir this kefir is thick and fluffy like whipped cream...very yummy!

Eggplant Bacon Recipe Revision~
I find that the proportions of all the recipes I have tried is just too greasy...so here is what I made yesterday and it is perfect
4 med. eggplant~peel and slice on a mandolin in long strips like bacon
soak in a mixture of:( I blend mine in the Vita-Mix)
1/2 c. olive oil
1/2 c. apple cider vinegar
2 T. raw honey
2 T. agave
lots of cracked pepper

dehydrate overnight at 105 degrees

It is a beautiful sunny day here where I live. My youngest daughter and I just had lunch out on our back deck. As we look out, we see trees and a lake about 300 yards away. We are looking forward to getting on our pontoon boat this summer and spending some quality time together.
Remember to spend time with the people you love today. We do not know what the future holds. Jim Elliot said, "Wherever you are, be all there."
How many times are we guilty of thinking of other things when we should be listening to the person right in front of us. I know that I miss out because of my own neglect. How about you?

fudge in a ramekin~raw cacao powder, almond butter, maple syrup and agave nectar..stir and eat!

Smoothie~raw almond milk, banana, raw cacao nibs, mesquite, lucuma, maca and 1/2 scoop of Amazing Green Superfood~chocolate, ice

Spicy Guacamole topped with sliced black olives and celery stick crudettes

Banana Split Smoothie & Raw Almond Joy

Today's fare~
a.m. smoothie~raw almond milk, banana, cacao nibs, ice
24 oz. of Green Juice

Banana Split Smoothie

Coconut milk kefir (this is really thick)
a blend of almond milk kefir & coconut milk kefir ( this is a little more liquid-y)
3 bananas
3-4 T. raw cacao nibs
2-3 handfuls of frozen strawberries

Blend in Vita-Mix. makes 3 to 4 servings

Blended soup
2 celery stalks
2 roma tomatoes
handful of mixed greens
water to blend
blend until desired consistency. topped with sesame seeds and shredded dulse

side dish of ginger carrots with nutritional yeast

Peanut Butter Cacao Nib Smoothie
raw almond milk
banana
cacao nibs
organic no sugar, no salt peanut butter
agave
ice



Raw Almond Joy~

cocoa
pure maple syrup~thanks Brian Prevost!!!
agave
unsweetened coconut flakes
soaked almonds-save for topping
Mix everything together in a small bowl except almonds. Then divide cocoa/coconut mixture into individual ramekins
and top with an almond or two


40 mins. weight training and 30 mins of power yoga today!!!

About my Non-Raw Posts...and a "Not-a-tarian"

You may have noticed I post recipes that are not raw. I am, like many of you, living with family members that do not eat a primarily raw diet. I like to make up recipes as I go. For a long time, whenever my family wanted something that I had previously made, I could not come up with the exact ingredients. Blogging has made it easy to hang onto recipes that are family favorites. I hope that if you are living with family members that are eating a healthy whole food diet you might like to try some of my creations out on them. Therefore I will continue to post things that I feed my family.

Today~work and running around with my daughter. I have been trying to stock her up with some healthy foods & some extras to take back to Tenessee. I have packed many dry goods & perishables...beans, lentils, brown rice, spices, herbs, homemade salve, homeopathic rememdies, local maple syrup, raw milk cheese, organic eggs, organic bread mixes and some herbal teas..
I just asked my Vegan son what we would call my daughter...a lacto-ovo vegetarian....he said...no... she is a, "Not-a-tarian"....lol. She is a striving Vegetarian.

My son is a strict Vegan. My youngest is whatever I allow her to be. :)

My husband J is still a High Raw Man...and looking good! He started his new position at the company he works for. It requires physical labor...bendng, lifting and moving heavy items repeatedly. We can already see his muscles becoming more defined.
I believe God made us to work and to move..there is nothing wrong with good hard work. It helps us to stay healthy if we add a healthy plant based diet, sunshine, clean water, deep breathing, a way to relieve stress~a positive attitude...laughter....and love.

Ginger Carrots
I tasted an avocado eggroll from the Cheesecake factory that my daughter brought home from last nights dinner. Tasty.
here is a link to a copycat recipe...just substitute..rice paper if you want a spring roll or a romaine lettuce leaf for the eggroll portion and skip the egg..do not fry it..eat it RAW..that is the way to go...and make other substitutions for items that are not healthful..example..sugar~use agave or maple syrup.
I may try to make some Raw form of this in the near future.

Sweet Potato Lentil Soup for the High Raw Man & family~not raw







Sweet Potato Lentil Soup

10-12  c. water
1/2 red onion chopped
4 garlic cloves minced
14 oz of lentils rinsed and drained
1/4 to 1/2 c. barley or wild rice or another grain of choice (optional)
4 stalks of celery chopped
2 carrots diced
2 sweet potatoes peeled and diced
2 t. rosemary
1 t. oregano
2 t. sea salt
1 t. Italian seasonings
1/4 c. Seitenbacher vegetable broth
1/4-1/2 c. nutritional yeast
strip of wakame or sea veggie of choice (optional)

put all ingredients in a pot and bring to a boil, then simmer until done
or my favorite way to make soup is stick it in the crock pot overnight.
you may need to add some water

I wanted to get this recipe written down for later use. My youngest said it was amazing~and she does not like soup...

Coconut Noodles and Peanut Sauce~Sowing and Reaping Good Things!

My daughter is visiting from Tenessee so I've been pre-occupied. I am also trying to complete a nutrition class to receive my certification. In the meantime life goes on.
My husband is just about 1 week away from the completion of his Biggest Loser contest at work. He has lost a total to date of 25 lbs. following a high raw vegan diet (with a couple of slips) For the first two months he did nothing but talk about what he couldn't have and imagine eating those things. Yesterday he said to me, "Eating a hamburger sounds gross"....can you believe it?? I've heard you can establish a new habit in 21 days....but usually we need more time to transform our minds... our thinking....and it is in our nature to look back and to long for some things in this life. Sometimes we forget about the benefits of doing the right thing or eating a healthy diet. It is a good idea to remind ourselves of the benefits of eating healthy and living a good and clean life.
Garbage in...garbage out...If we fill our minds with unclean thoughts, our actions will reflect this. If we fill our bodies with unhealthy foods our health reflects this too!
If you have a set-back, get back on the horse and continue to do what you know is right, remind yourself of your goals and of the positive results that you will reap by healthy living.
If we live a godly life in Christ Jesus we have a reward in heaven and this pleases God and we are at peace with Him. If we fail, He forgives us and cleanses us from all unrighteousness.
In my life, being at peace with God comes first and then peace comes to me as I live out His life in me.
The Bible tells us, "So whether you eat or drink or whatever you do, do it all for the glory of God" 1 Cor. 10:31 My desire is to use my life and this body he has given me in a way that honors him. One way is by eating a healthy diet and not abusing my body with eating or drinking things that are bad for me. I find that when I do this, there are present benefits. Not that this is the goal, but this is the result. This is the law of sowing and reaping.
Please consider what you are sowing in your life today.

Coconut Noodles and Peanut Sauce

2 young thai coconut~meat only
click here to watch a video to show you how to open a coconut
Cut the meat into thin noodle like strips
set aside

Peanut Sauce
1/2 c. no salt, no sugar organic peanut butter
1 T. Braggs Liquid Aminos
1 dried hot red pepper
water to thin

mix in Vita-Mix until creamy. pour over coconut noodles and mix together
top with basil and or cilantro. I sprayed on a little more Braggs.


I am also enjoying my Kefir water

kefir water grains from Marilyn the kefir lady
1 qt. of water
1 c. raw sugar
1 T. rapadurra
1 c. coconut water

ferment 12-24 hrs.
remove grains by straining. start a new batch.
add chopped fresh ginger to kefir water and let sit until desired taste is achieved and then refridgerate.

My Coconut Milk Kefir is delicious and I'm on my way to make some waffles for the rest of the family using it.

Coconut Milk Kefir

Kefir grains
1 can of coconut milk (organic unsweetened)
I add some fresh almond milk also to make it add up to 2-2 1/2 c. of liquid
let set for 12 -24 hrs.
it's done...strain and begin again

Last night it got finished very quickly and my kefir exploded onto the counter like those 4th of July snakes that grow when you light them...hehehe!

Today was a beautiful day in the LORD. My newly married daughter, who now lives in Tennessee is here for a week long visit. It was such a joy to attend church with my family today. Jesus Christ is the reason I sing and have joy in my heart. He has filled my life with purpose and meaning.

CooKoo for Coconuts!

Today I had a taste of the coconut milk kefir I made ..very good. I also added some of the water to my kefir water that is fermenting.

This morning I opened a young coconut for my B-fast. This can be a real job! Check out this link at Raw GuRu.com for instructions and a video to see how to do it.

Fermenting Bug~

Recently I've noticed a few posts about fermenting and I caught the bug.
I cleared out all the old femented veggies from my fridge. Some of them were two years old...so I was afraid to eat them...they smelled wonderful..but....my husband always says.."when in doubt, throw it out"...so out they went. I ate a pint of my ginger carrots today and they were perfect after 4 days on the counter. Last night I made 2 pints of coleslaw..it is alive and on it's way. Today my kefir grains arrived from Marilyn the kefir lady. I got the water kefir grains and the milk kefir grains. Both of them looked healthy and are sitting in jars on my counter. Coconut milk in one and sugar water in the other. They look alive and active. I can hardly wait. After my kefir is ready I'm going to crack open my coconuts in the fridge and dig out the meat for some coconut cheese/pudding. This stuff is awesome. A few years back I was purchasing 2-3 cases at a time and we'd have a hay day in the kitchen cracking them open and retrieving the water and meat.
I think my coconut source went dry back then, but I have a new source for young coconuts....so here we go again.

Today was a work day...then to Trader Joe's for a few items then to my parents for a visit. Hi Dad and Mary!!!
Afterwards my daughter and I went to a local park. She rollerbladed and I walked briskly for 35 mins. I'd love to try rollerblading but I'm a chicken. I am 48 yrs. old and a little fearful of breaking something. There are just too many other ways to get my exercise. So I think I'll continue to try to run behind her. :)

Bonfires and Refried Beans~raw of course!

We had a gorgeous day! Beautiful~ warm and sunny from noon until evening and then it turned cool. I had a full day today. After a dental appointment for my daughter we came home and off to the kitchen. I made green juice, carrot juice, Carrotopia smoothies, green dandelion smoothies,
fermented cabbage, more Eggplant bacon...cut up some cantaloupe for my hubby for tomorrow and some celery. I made some raw refried beans and some regular refried pinto beans for the family, chopped some tomatoes, lettuce and onions. Smooth sailing in the kitchen today....no stress and I got a lot accomplished. I love days like this. Afterwards, my two children and I went outside and cleaned up the yard by removing dead leaves from the flower beds and discarding last years stalks from a variety of flowers we enjoyed last year...and spreading the seeds. My son started a big Bonfire in the fire pit and we enjoyed it for a few hours this evening as the temperatures went back down. It was clear night and we could see a star filled sky.

My eats for today~
a.m. smoothie~raw almond milk, banana, cacao
(I am forgoing all of the superfood powders for awhile to get things moving a little more rapidly...if you know what I mean)

16oz of green juice that I added a shot of muti-green kombucha to

BLT~eggplant bacon with tomato and veganaise on romaine...I ate several of these...I just cannot eat one
Fermented Ginger carrots

Carrotopia~frozen banana & pineapple, carrot, apple and ginger juice blended

Raw Burritos~romaine lettuce filled with raw refried beans, chopped tomato and sliced black olives
salad~romaine, tomatoes and Fermented ginger carrots

1 banana topped with chocolate sauce (cocoa, agave, vanilla and water to thin) and pecans

Raw Refried Beans~

4 c. soaked sunflower seeds~2 1/2 c. before soaking
2 T. powdered onion
1 T. cumin
1/4 t. cayenne
1/2 t. paprika
1/3-1/2 t. garlic powder
a few shakes of taco seasoning (frontier brand)
1 t. salt
2 T raw almond butter
3/4 c. water

Process until smooth...I put mine in the dehydrator for a couple hrs. at 105 degrees.

My family had regular refried beans I made in the pressure cooker~ 4c. of dried pinto beans, 1 red onion, 4 cloves of garlic, 1T. salt..cooked until very soft and blended in the Vita-mix, then back in the pot til they thickened up a bit....they had a tostada feast tonight!

Community Supported Agriculture~CSA

Last week we met with our local farmer that grows our produce for the CSA.
This will be our 6th year to support him and his family and reap the harvest of their labor and prayers. I can say that we have always been pleased with our produce and the quality of the veggies continues to improve year after year, not that they were ever bad. Our farmer continues to educate himself and has committed to not use any chemicals on our crops. He is not certified organic but grows organics and uses sustainable methods of farming. I encourage you to check out your local CSA and support them and enjoy the fruit of their labor.
The way ours works is that at the beginning of the season we give our farmer seed money and then for approximately 26 weeks of harvest we get a portion of produce that feeds a family of 4 who eat a primarly plant based diet. We also have access to several other items such as bakery, raw milk, raw milk cheeses, grass fed beef, organic free range chicken, eggs, handmade soaps, fermented drinks and veggies and such. We pick up our produce once a week and any other items we have ordered. The group I belong to also orders from United buying Club once a month and we do a group buy from a local organic produce supplier.

I've got some Eggplant Bacon in the dehydrator for tomorrow. I also plan to make it a jucing and preparation day by making some green smoothies and blended soups to take on the run.

When I was growing up I thought the day only had to do with wearing green and drinking green beer. St. Patrick wanted to convert the Irish to Christianity. I remember reading this to my children several years ago and being quite surprise. Go on check out the link and be informed.

Fermented Ginger Carrots!!!!

Thanks to A Bitt of Raw showing off her fermented veggies, I decided to make some of my favorite ones...Ginger Carrots~
These are soooo good!!

Ginger Carrots~

5 lbs. of organic carrots shredded in food processor
2 thumbs of ginger or to taste~grated/minced

place ingreds. into a large bowl. remove 1 cup of carrot mixture and I put mine in a magic bullet (small blender) and add 1/2 cup of water..maybe more
blend until thick and juicy. add back to carrot mixture and massage until carrots are limp and juicy. Pack mixture into pint jars making sure the liquid brine is covering the carrots leaving a 1" headspace. seal loosely. sit in a moderately warm place in the kitchen for 3-5 days. They should come alive and be tart and tasty. store in fridge and eat as a condiment with your meals.

Monday's Workout and New Job for High Raw Vegan Man... aka hubby

I love Monday's, how about you?
My new job (housekeeper) gave me a five hour non-stop work-out. I can vary the intensity as I wish. When I clean my own home I do not go non-stop and it certainly doesn't take me five hours. I get to do it again on Thursday. This is a real perk for me and adds a little variety to my work-out routine.

3 c. blended soup~1/4 of a cuke, 3 roma tomatoes, romaine, celery, tahini, lime, braggs liquid aminos...blended til smooth and added 1 chopped roma and a handful of dulse chopped...yummy

My husband is going to join the regular work day world tomorrow. He has been working afternoons til anywhere from 3a.m. to 9a.m...way to many hours...for the last 2 years. So I have him packed up and ready to hit the road in the morning.

This is a new gig so we don't know how many hours he will be gone, so we are packing heavy. It is better to have too much, than not enough. Too much and he can always bring it home, too little leaves the door open for temptation.

He will officially start his new job next Monday, which will be very physical. Yeah!! Lots of exercise. Therefore, I am trying to brainstorm on what to make him for his lunchbox. His old thinking says, cheese and lunchmeat sandwiches...I say protein powder smoothies, a new stainless steel thermos for his soups, raw crackers, nut cheeses, salads/veggies. Any good recipes/ideas out there from my readers is greatly appreciated. Anything that travels well in a cooler for up to twelve hours is what we are looking for. Blended soups/salad are out for his menu...High raw vegan man...maybe some rice and bean dishes.

Almost Raw Vegan Sloppy Joe's

2 pkgs of baby bella mushroom's chopped and some slightly mashed with fork
add:
dried onions
organic catsup(can be made raw)
squirt of yellow mustard (use mustard seed powder for raw)
1/4 t. cumin
garlic
chili powder or mexican seasoning
paprika

mix together and place in dehydrator until warm

Kaboom! Always Be Prepared!~My husband is down to 198lbs.!!!

For my friends with IBS/colitis/crohns or gastro-intestinal issues. You know that it is a slow fade when you give yourself away. You feel great for a long time and the pain that you have previously experienced fades a bit from your memory. Then you think, I will just have a bit of the evil, because a bit does not fully pull the trigger and cause an explosion of pain...but...then bit by bit you get the gun cocked and you eat that one final evil bit and....Kaboom....it fires on you.
I have had a lifestyle shift here recently...I began working outside the home after 20 yrs. absence. I love it..but...I have not been fully prepared when I leave my home. After hard physical labor for 5-7 hrs I get hungry and my green juice has not been enough, so I have stopped at Panera's for a salad with whole grain baguette...probably on three different occasions. Then there are those greasy jalapeno Kettle chips my son's loves..I cannot have these things in my house...they don't like me.
The gun fired yesterday....I felt it coming...ouch!!! I say to myself...I eat a good clean and raw diet 96-98% of the time, this shouldn't be happening...well. This is who I am.
I said all of that, to say this. Be like a Boy Scout...always be prepared!!!
Unless you have been successful for many years, don't bring things into your home that will tempt you. Also, when you are leaving the house, take your food with you or plan ahead ~where you will go and what you will eat if you must go out to eat. This way you can set your mind and be determined to succeed. Then just do it! Do not vear from your plans. This has been a clear reminder to me that I do best on the highest raw diet possible. So from now on I will be preparing my blended salad's the night before I have to work and take them with me...and my son will have to eat jalapeno Kale chips...I just have to find time to make them...mmmmmmmmmmmmmmmm.

Today's tummie tamer's~
16 oz My Green Beauty Juice~made with celery, cucumber, lemon and cayenne pepper

3 c. smoothie~raw almond milk, 2 scoops of Amazing Superfood~chocolate, chia seeds, hemp seeds

3 c. Blended Soup~1 c. celery, 3 roma tomatoes, 1 c. cucumber, cilantro, 2 sprigs of dandelion, 1 heaping T. tahini, splash each of Braggs liquid Aminos and lime juice~blend until smooth...add more water to thinness desired..sometimes top mine with chopped tomatoes/cukes..but today I drank mine on the run

My husband is succeeding! He is down to 198!!! He has had a bit of emotional eating here and there.... it was nothing that got out of control.
He has had a lack of work which has created a bit of stress for him...But God has shown himself faithful and worthy of our TRUST again and my husband will be joining the normal people with a weekday job and daytime hours!! Praise the Lord!!! We have not had this kind of schedule for the past 8 years of our 10 1/2 yr. marriage. Life is always changing. More lifestyle adjustments ahead....I am looking forward to them.
Back to my hubby~His diet is basically unchanged. High Raw and Vegan. I am trying to get more veggies into his diet, but he prefers the fruit. He is continuing to slim down, but the workouts are still difficult for him to work into his schedule. The great thing about his new job is that he will be unloading items off of a truck and loading and organizing them after delivery...so he will be getting physical exercise. So even if he is pooped when he gets home he will have already got some kind of workout in.

This week he will be drinking Dandelion Smoothies~
water, banana, strawberries and dandelion...he likes them!
and he packed 5 or 6 of them in his lunch today along with 2 cantloupes and
celery.... that will be his days eats. He is hoping to knock off about 8 more pounds before the first of April.

Busy on the Homefront~Saturday~~~~Monday, work day!

We have had a couple of really nice sunny days here in the midwest. I am anxiously awaiting Spring. My daughter and I walked/ran our dog "Buddy" yesterday. Then we were down for some girl time!! "Making up"~ mom and and then an old movie, "Sabrina" with Humphrey Bogart and Audrey Hepburn.
Today was a run for some veggies to juice and purchase a new washer and fridge. Tomorrow they will deliver!!! I was shocked that they delivered on Sunday but I am very grateful. Laundry doesn't stop for any one or any thing.
Now that my husband is into juicing and I want to encourage his interest I need a place to store his 50# bag of juicing carrots. They usually get used up pretty quick but they do not keep well out in our sunroom when the temperatures begin to warm a bit.
Speaking of my man, he is still losing. He is now down to 201 and his pants are falling off of him. His work schedule is long and physically and mentally challenging ... he also drives an hour to work and an hour home. Therefore he is having difficulty working out every day. But he does it as his body allows.
He is still eating high raw and vegan and this is working well for him. His buddy's at work sampled some of the green smoothie he took to work this past week. They were made of Kale, banana, pear, blueberries. He said the guys were surprised and liked them. He may be getting something started at work as they watch his transformation.

I am still enjoying getting my workout while working. Remember to get your body moving today. Increase your oxygen intake through deep breathing. Take a brisk walk and do some stretching. Try to do something everyday.

I am trying to incorporate some friendly bacteria in my gut by taking the PB8 vegicaps. I have had a couple of years past that all of my friendly bacteria got washed away during cleansing and I have not been faithful to feed it. Therefore those closest to me know that I need this remedy.

Vitamin D; How to make Raw Almond Milk~video

Oh, Mister Sun is shining brightly here and I am ready to go outside and get some Vitamin D on. When the suns ray reach our skin they trigger vitamin D production. Vitamin D is one of the most healing chemical in our bodies. It is made by our bodies~free of charge. Just go out in the sun and soak it in. Depending on where you live in relation to the equator will affect the timing of when it is best to expose your skin to the sun and the length of time you expose yourself. I have been coaching my husband for about 47 days in his journey to lose weight and decrease his cholesterol. So far he has lost 23 lbs. and has just begun a workout regime. He is following a High Raw Vegan Diet. There are as many diet plans out there as there are individuals. One key is finding one that you can incorporate into your lifestyle and have a support system to encourage you as you make the transition. From my own research I believe the most healthful diet is High-raw and vegan (or 100% Raw) and as much organic as possible. It may take some time to get to this place...just remember, it is a journey and as we become more educated about our bodies and what provides the best nutrition the changes will come. Be patient and just keep moving forward. It you falter, don't despair, just pray, get up and get back on the path.


As you may know I use raw almond milk daily. Our family goes through about a 1/2 gallon per day. I use it in my smoothies and sometimes my children will use it on raw granola's. I take the leftover pulp and make nut cheese or pate's, dehydrate it into flour, make raw cookies or add it to raw breads.

I wanted to share a couple of video's on how to make RAW ALMOND MILK. This type of milk is delicious, easy to make and very helpful for those that are lactose intolerant and/or want to avoid dairy. Today my husband ate~

16oz of carrot juice

Very large salad~1 head of romaine, a handful of cilantro, roma tomato, celery, yellow bell pepper, guacamole( about 1/2 avocado) topped with 1 c. of black bean soup and broccoli sprouts and a bit of honey mustard dressing.
2 raw donut holes
3/4 of a cantaloupe

28 oz of Amazing Grass Superfood smoothie~chocolate ~raw almond milk, banana, mesquite, hemp seeds, raw cacao nibs

1 small gala apple sliced, 4 stalks of celery and 2 heaping T. of organic no sugar, no salt peanut butter

My menu~
a.m. smoothie~ 1 1/2 c. raw almond milk, 1 banana, 1-2 T. hemp seeds 1 t chia seeds 1 t. maca, 1t. mesquite, 1t. lacuma, 1/2 T. raw cacao nibs, 1/2 scoop of Amazing Green Superfoods, ice...you can add frozen cherries to this and it is amazing!...if this is a bit powdery for you..add a bit of water and more ice...and always drink 2-4 cups of water when rising/before this smoothie


These are links to my superfoods that I incorporate into my morning smoothie. I did not purchase all of these at one time. I added one item at a time. I use the chia and hemp seeds for protein and omega 3's..these are just a couple of the benefits. Each superfood has it's own unique benefits.


32 oz of Green Lemonade ~celery, lemon and ginger with liquid stevia

Salad~romaine, cilantro, celery, roma tomato, yellow bell pepper, guacamole, broccoli spouts, hemp seeds and honey mustard dressing
2 raw donut holes
Amazing Superfood Smoothie same as above

GT's ginger kombucha


Black Bean Soup~non raw

fill a crock pot 1/4-1/3 full of rinsed and drained black beans
add:

2-4 cloves of crushed garlic

1 chopped onion (I use dried if in a hurry)

handful of dried celery leaves or fresh (periodically I dehydrate my celery leaves~you can grind them up as a salt substitute or season soups with them)

1 t. cumin

Wakame (dried seaweed) chopped

I added a handful of chopped kale to disguse the seaweed*

1 c. shredded carrots*

sea salt to taste

Fill the crock with water leaving 1-3" at the top.

I set mine on high overnight and they are ready by morning. Temperature will vary depending on your crockpot.
If my family is not eating them until dinner the next day I will set it on low until morning and increase temperature til noon and they are usually done and then set on keep warm.
*the kale and carrots are usually added the next day prior to eating so they are not cooked to death...this will depend on your tastes and time frame.

If this is not all eaten the first day I will add something else the next...maybe diced tomatoes and/or chili powder/taco seasoning etc.
maybe the next day I will add some leftover long grain brown rice.
On the final day I will make it into a mexican casserole by alternating beans, whole grain tortillas, nutritional yeast, salsa and maybe some macho nacho sauce.

Working for the Weekend!

Working for the weekend! My youngest daughter and I had a wonderful time today. We worked for a few hours and then off to the Health Food Market where we enjoyed a Smoothie with stawberries, peaches, apple juice and Hemp seeds! We sat on a couch and split a piece of vegan chocolate cake....the coconut was in big flakes with pecans in the icing...it was sooo good! Then off to the Goodwill for some recycled books and a shelf for our workout room. We want to place a small DVD player upon it to watch videos while walking on the treadmill.

I had my usual today a.m. smoothies and green lemonade
Romaine/cilantro/celery/roma tomato salad topped with jalapeno's and Amy's veggie chili~not raw~ back to the Raw tomorrow! Mostly raw today but more cooked food than I like.

now I am off to workout!

If you have children....remember TIME and laughter are important..sometimes we have to swerve from our stringent path and enjoy what they enjoy..also, it is important to take an interest in what they are interested in...this show them that they are valuable..and smile, smile, smile and tell them you love them.

Tuesday~

Yesterday~Tuesday was a good day, Bible Study Fellowship and a few errands.
When I got home I got in touch with my family and did some troubleshooting on an order I placed and then to the kitchen I went. Green Juice and Carrot Juice in abundance. At times this can get a little tiring but I always count the benefits and they outweigh the time I spend in the Kitchen.

Today's eats~
a.m. smoothie~raw almond milk, banana, chia and hemp seeds, maca, lucuma, mesquite, cacao, ice

36 oz of Green Lemonade

Blended salad~3 roma tomatoes, 3-4 celery stalks, 1/2 avocado, cilantro, tahini dressing~blended and chunky topped with broccoli sprouts

My husband is still losing weight and working out! my youngest has been working out with us also. Yippee! I encourage you to get your kids moving!

I put mine in the crockpot on low overnite and it was ready in the morning.

Just another Day~

Today was a working day for me. Another 5 hr. workout, sweeping, mopping dusting, crawling around on the floor, scrubbing and stair climbing. Pretty cool that I am getting paid to do this. I am still trying to adapt to being gone from my home so much. I have always been a homebody so this is a big adjustment.
Jerry (my husband) and I cannot do our workout routine together so I'm grabbing my two children and hitting it up shortly. My 18 yr. old son is joining us voluntarily and my daughter is just going to do it. :)
I can feel a little tightness in my upper ab and my legs so I'm looking forward to some Yoga to get stretched out.

Today's eats~
a.m. smoothie~raw almond milk, 2 small bananas, maca, lacuma, mesquite, chia seeds, hemp seeds, cacao and 1/2 scoop of Amazing Green Grasses~chocolate ( I wanted some extra power to work on)

I made some of Raw Chocolate Chip Cookie Dough from Love Veggies and Yoga I only made one batch and stashed them in the fridge but they won't last long around here.
