Super Immune Building Pea Salad


Super Immune Building Pea Salad

2 bags of frozen green peas
2 large spring onions chopped
1 large orange bell pepper chopped
3 large radishes shredded
1/2 bunch of celery chopped fine
1 very large garlic clove
dollop of Vegenaise to moisten

I made a large bowl of mixed salad greens and topped it with this pea salad and 1/2 of a chopped tomato
and sprinkled it with dulse flakes...yes, it was good!

According to Dr. Furhman every item in that salad is nutrient dense except the Vegenaise....You could substitute an avocado for a healthy fat, then it would all be good.... 
or make a balsamic dressing with almonds or walnuts for the fat and blend it down.....
next time I think I'll try this....then it would be a Superfood Super Immune Building Salad!!!!

CSA Share Week #11 Summer Squash Salad, Creamy Pea Salad & No Bean Hummus


Week #11 of my CSA share!!
We have a lot of variety this week.  Our weather has been pretty dry here so our peppers are not as plump as they should be, but there is an abundance.  Many of the bell peppers pictured here were not in my regular share.  They are what are called seconds.  Seconds are always freebies.  Our farmer will send a crate or two of them and members are free to take as they please.  :)
Pictured top left and clockwise:
2 cantaloupe (1 is a second)
red beets
bag of salad mix
12 ears of corn
variety of bell peppers (we received 2 in our regular share)
2 onions
garlic bulb
parsley
basil
applemint
celery cuttings
bunch of carrots
In the center:
kale
summer squash
1 pint of blackberries

Italian Squash Salad
2 yellow summer squash (pictured below) shredded
1 green pepper chopped
carrots shredded
red onion diced
1 large clove of garlic
black olives sliced
oregano
basil
thyme
Himalayan salt
Organic Balsamic Vinegar
Organic Extra Virgin Olive Oil
topped with raw sesame seeds

This is a summer favorite!!  My husband said it tasted like pizza...I think he meant it had the flavor of pizza.

A good friend was cleaning out her garden before they left for vacation and gave us this box of green beans, squash and a green pepper .

The green beans are delicious and you can see we put the rest to good use!

Creamy Cheezy Pea Salad
1 bag of frozen peas or you can use fresh
1 red bell pepper
red onion diced
1 large clove of garlic
Daiya Cheddar Cheese (vegan)
Vegenaise~just enough to moisten

I order my Daiya Cheese from my co-op.  I get a five pound bag and divide it and keep it in the freezer until ready to use.  This saves us money by buying in bulk.  This cheese is vegan and melts very well.

My Daily Green Juice!
cucumber
celery
swiss chard
lemon
ginger
liquid stevia

 
NO BEAN HUMMUS
no measurements~I just tossed this in the Vita-Mix
1 zucchinni unpeeled
big spoonful of tahini
about 1/4 c. ground raw sesame seeds
lemon juice
1 red bell pepper
1 large garlic clove
Himalayan salt
Blended and poured half into one container and then added:
one small hot pepper
blend until smooth

Walnut Tapenade, Pea Salads and packing up to go!


Walnut Tapenade

1c. of kalamata black olives (pitted) or pitted black olives
1 c. of stuffed green olives
1 c. raw walnuts
2 large garlic cloves minced
2 T. extra virgin olive oil
1 T. plus 1 t. lemon juice
1/2 t. basil
1/2 t. thyme
1 t. oregano

Pulse in a food processor until slightly smooth but not totally pureed.  It should appear to have a bit of texture like very small crumbs.

you can dip some of those fantastic jalapeno tortilla chips from Food Should Taste Good or Mary's Gone Crackers or use it to stuff small bell peppers (pictured below)


My Daughters appetizer/dinner  plate...she was very proud of herself and said I should take a picture for my blog. Pictured is a bowl of organic Italian  baby greens with organic yellow heirloom tomatoes, a honeycrisp apple from one of our local orchards, carrot juice, organic raisins and pineapple chunks...obviously she likes fruit more than greens.....so I had her drink some Barley juice before eating.   :)


Pea Salad

1 bag of organic frozen peas
1 small red onion diced
sliced fennel with tops
balsamic vinegar


Creamy Pea Salad

1 bag of organic frozen peas
1/2 bunch of radishes cut in matchsticks
1 red bell pepper diced
1/2 small red onion choped
1-2 heaping T. Vegenaise
fresh dill

blend together



This is part of my young adult son's lunch he is taking with him to the, "Feast of the Hunter's Moon".  He will also be taking~garbanzo dilly bean mash, Jalapeno Chips, Green Superfood smoothies, honeycrips apples & bananas.  We checked out the menu at the event and it is full of meaty choices.  My son is a strick vegan, so I will load him up with eats for the day. 
Always plan ahead and make sure if you are planning a trip or an all day event that you will be able to eat according to your diet plan that works for you.

This cool container above was purchased at Big Lots for about $3 and the lid has built in fork & knife. It is great for packing a meal to go.
