First CSA day of the Season!!

Yesterday was the first day of  the CSA which I facilitate and host at my home.  I love this time of year when  we receive super fresh (picked that morning!) vegetables.
I had a grand time setting up things yesterday and meeting and greeting all of our last year's members and newbies!

The contents of our boxes included: 
oregano
thyme
 chives
leaf lettuce 
spinach
 baby swiss chard,
green onions,
radishes 
white sweet potatoes
 and asparagus!
  Wow!!!  What a great start to the season!

No pictures this time as it was a super busy day for me and my family...I also had a couple contractors at my home during our pick up hours.

Here is super easy and quick fix meal...super fresh and yummy!

Romaine Boats
large romaine leaves
filled with
diced avocado
shredded red cabbage
red onion
tomato
cilantro
lime
sprinkled with dulse flakes



                       Kale and Bean Salad


1 bunch of kale~cleaned and chopped
Place kale in the bottom of a large bowl

3 cans of variety beans~ ex. Black, garbanzo, kidney~ drain & rinse
1 small red onion diced fine
1 bell pepper your choice of color
2 stalks of celery diced

Place all of these ingredients in a different bowl.

Marinade
¼ c. honey or a mixture of agave & honey ( I used stevia)
½ c. lemon juice fresh or Volcano organic lemon juice
2 T. Extra Virgin Olive oil or flax or hemp oil 

Blend marinade ingredients together and pour over bean mixture.
Add pepper if you like or salt free herbs of choice.
Then pour the bean mixture over kale and let sit for a couple of hours to marinate.

This can be served as a main dish or a side.


Local farm fresh red and green baby kale...mmmmmmmmmmmm
I have been adding this to salads and smoothies.


Chocolate Chip Mint Avocado Smoothie
low glycemic

In blender:

2 c. homemade almond milk
2-3 c. spinach
2 T. raw cacao powder
3-4 drops of peppermint oil

blend and then add:

1/2 frozen avocado cut into chunks

blend again and then add:

1 c. frozen blueberries
2 T. raw cacao nibs
stevia to taste

Blend to creamy consistency and enjoy!!!

More Local Veggies & Kale and Bean Salad Recipe


Here is a picture of some of the yummy young kale I received from my CSA farmer. 
Kale is a cruciferous vegetable.  
Kale is one of my family's favorite greens.  All of my kids love to put kale in green smoothies or lightly steamed.
Today I am making a kale & bean salad that I came up.

 
  Kale and Bean Salad
  
1 bunch of kale~cleaned and chopped
Place kale in the bottom of a large bowl

3 cans of variety beans~ ex. Black, garbanzo, kidney~ drain & rinse
1 small red onion diced fine
1 bell pepper your choice of color

CSA, Rejuvelac, Mexican Nori Crackers, Cheezy Cauliflower Salad, Nacho Chips

CSA is Available!!!
This was my first special order....
1 bunch of green onions
 (they were so large, my daughter thought they were leeks!~I told her they were from Canaan)
1 bunch of radishes
3/4 lb of baby swiss chard
1 lb of spinach
2 lbs of lettuce mixture

Our first official CSA portions is expected around May 18th...until then we are able to place special orders of what is available
Everything is delicious...I juiced some of the spinach in my 1 gallon of
Green Juice
today~no pic
4 bunches of celery
1 lb of spinach
1 bunch of beet tops
stems from 2 bunces of kale
outside leaves from 1 head of cabbage
6 granny smith apples
3 big pieces of ginger
1 c. of lemon juice
liquid stevia to sweeten
delish....and very mild


REJUVELAC
2 c. of wheatberries~soaked, sprouted
after the tails are as long as the wheatberries, rinse and fill jar with filtered water, cover with cloth and let sit on counter 2-3 days until a foamy film develops on top...pour off rejuvelac into sterile glass containers, place in fridge
add more water to berries and let sit on counter and ferment one day...pour off rejuvelac and compost wheatberries.
Rejuvelac has a tangy fermented taste that reminds me of whey...the real stuff...


therefore I decided to make some
Fire-y Lemonade with it!
juice of one lemon
dash of cayenne pepper
4 oz of rejuvelac
squirt of liquid stevia
water & ice
mmmmmmmmmmm....much better!

A little sprouting going on~
from top left~alfalfa, radish, wheatberries, mung beans, sprout salad mix (red and green lentils, radish, alfalfa)

MEXICAN NORI CRACKERS

On nori sheets spread not-Refried Beans and on top of that spread Macho Nacho Sauce
place in dehydrator and dry at 105 until slightly dry, then cut with kitchen scissors into cracker size
remove from teflex sheets and continue to dry until done


From the top celery tops, Mexican Nori Crackers, and Buckwheaties

Final product~Mexican Nori Crackers!!!  These sound weird, but they are delicious....
I say never let your nut cheeses go to waste...dry them in the dehydrator and crumble on top of salads or smear them on a nori sheet and make crackers!

Yummy Kale Salad
2 bunches of kale
1 extra large green onion
2 radishes
3 baby carrots
4 small garlic cloves
sprinkle of Himalyan salt
1/2 c. of lemon juice
massage until wilted and then add:
1/2 c. olive oil
and 1-2 t. dulse granules

My Salad from top left
guacamole~avocado's, red onion, vine ripe tomato, garlic, lemon juice
chopped red beet, 4 baby carrots, 1 celery stalk
kale salad
cheezy cauliflower salad
on a bed on green lettuces and baby swiss chard
sprinkled with dulse and more nutrtional yeast

CHEEZY CAULIFLOWER SALAD
1 head of cauliflower chopped
1/2 c. red onion chopped
2 garlic cloves minced
1 c. nutrtritional yeast
1/2 c. lemon juice
1/2 c. olive oil
dulse
salt


Yesterday's Salad
baby chard
spinach
kale salad
radish
radish sprouts
mung bean sprouts
lentil sprout mix
1 tomato
1 spring onion
garlic
Balsamic vinegar
dulse granules

Kale Salad...Italian Mustard Dressing and Salsa Recipes

KALE SALAD

2 heads of kale cleaned and de-stemmed and shredded
red onion
garlic
pumpkin seeds
chopped tomato
olive oil
lime juice
Bragg's Liquid Amino's

This salad is best left overnight to marinate and soften.

ITALIAN MUSTARD DRESSING...I just made this up off the top of my head..good and tangy

1/2 c. olive oil
1/4 c. lime juice
1/8 c. coconut water vinegar
1/8 c. water
Italian seasoning blend
oregano
1 T. dijon mustard
water
Blend in Vita-mix

SALSA

In Vita-mix
2 large heirloom tomatoes
1 jalapeno
1/4 red onion
1/4 c. lime juice
2-3 garlic cloves
blend on #2
add:
chopped cilantro & one large chopped tomato & salt

These are a few recipes I've made in the last couple of days. I've been eating a lot of kale salad, smoothies and blended soups. I also got my jucing done for a couple days. I've been spending time with my family and watching my son work out in our yard, as he tries to re-create order and new design. We are giving him free reign to landscape our front yard and I am excited to see how it turns out this summer. I'll post before and after pictures when the project is complete.

Christmas Salads


Rawpuchinno
16 oz carrot juice blend~carrots, celery, apple, ginger
16 oz green juice blend

Red/Green Blended Salad~ Christmas Salad!
Romaine
Bib lettuce
celery
roma tomatoes-2
cilantro
lime juice
1 heaping t. guac
1/2 c. beet salad
sprinkled with dulse flakes

This quantity filled up my small Vita Mix container before blending and made about 3 cups of soupy salad like a finely grated cole slaw texture

raw carrot cake cookie (see recipe link on sidebar)

Peanut Butter Smoothie
2 bananas
organic peanut butter
raw almond milk
honey
ice

Kale Chips~I am making them so they are not quite dry yet, but I couldn't resist (check the sidebar for recipe page link under recipes and topics)

I spent a lot of time in the kitchen today.
One item I made for my family was a Bean and Kale Salad(this is not on my menu but it is a good one)

BEAN AND KALE SALAD

clean and shred kale on the bottom of a large bowl and sit aside

In another bowl:
3 cans of black beans (rinsed and drained) FOR A RAW VERSION~use red and green lentil sprouts (red are my favorite~this could be labeled Christmas Bean and Kale Salad:))
1 c. of diced celery (helps to aid digestion)
1/2 sweet red onion
1/2 c. shredded carrots
1/3 c. raw honey
1/2 c. extra virgin olive oil
1/3 c. fresh lemon juice
salt to taste

mix together throughly and spread on top of kale, covering it completely..do not mix kale and beans together but let it sit in fridge overnight and then stir before serving. Be sure to cover it.
I have made this in the past with pinto beans, kidney beans and green beans instead of the black beans and also added red pepper instead of the carrots...I just make it with whatever I have on hand...the dressing is what really sets this this off.

** You could make this raw by using sprouted lentils..a combination of green and red lentils would be good.
