Salad Day


I spent a few hours in the kitchen today making green and red juice, beet salad, pea salad, broccoli salad and some raw bread and chips...
Pictured is our veggie tray for the day...broccoli, carrots, celery, red bell peppers and cukes. This sits on our table for munchies all day or as long as it lasts.

Beet Salad
1 bunch of beets peeled and shredded
5-6 cloves of garlic minced
1/4 c. ev olive oil
1/4 c. lemon juice
dash of salt
dash of ground cloves
mix and let marinate for a bit.

Pea Salad
1 bag of frozen peas
3-4 green onions chopped
1 red bell pepper diced
3-4 stalks of celery diced
2 T. ev olive oil
2 T. balsamic vinegar
dash of salt

Broccoli Salad
1 1/2 bunches of broccoli cup into bit size pieces
2 garlic cloves minced
1/4 c. red onion diced
handful of raisins
1/4 c. lemon juice
1/4 c. ev olive oil
drizzle with Raw Agave
dash of salt

After lunch today we went for a family bike ride.  The weather was beautiful!!!

New Puppy! Mexican Feast and more Fakin Bacon

This is Midnight. and she is 7 weeks old...this past weekend when my kids visited their dad, he had a surprise for them...a new puppy. They now have two pug's at dad's house.
 She is beautiful, but she didn't like the flash on my camera.
My handsome son was leaving to go to a friends wedding, so I had to take a photo.
Mexican Feast...from top...no bean refried beans, red onion, green leaf lettuce, tomatoes, Macho Nacho Sauce

Not Refried Beans
I found this recipe on the internet a while back and copied and printed...I do not have the source...sorry
1 1/2 c. sunflower seeds, soaked for 2 hrs or more
3/4 c. sun dried tomatoes, soakd at least 1 hr
2 T. lime juice
1 T. olive oil
2 t dark miso
1 t. cumin
1 t. chili powder (I used Frontier Taco Seasoning)
1 t. ground coriander
1 t. salt
1/4 t. chipotle powder ( I used Mrs. Dash Chipotle)
2 garlic cloves
1 green onion chopped
handful of fresh cilatro (1/4c.) chopped (I used 5 t. dried)
Tomato soak water

Process all ingreds except cilantro in food processor until smooth. add a little soak water if needed. Fold in cilantro by hand....I added mine as I processed it..opps!

Macho Nacho Sauce
from "How We All Went RAW"
 by Chas. Nungesser and Stephen Malachi
In Blender add:
1/2c. distilled water
1 red bell pepper washed and seeded
1/2 c. pine nuts (I use macadamia nuts)
1/2 c. sunflower seeds
1 T. miso( opt. if used omit sea salt)
1 clove garlic
1 Fresno pepper (red Jalapeno)
1 1/2 T. sea salt
Blend on high until creamy. Serve on top of tacos or as a dip for "chips"

Celery Stick with no bean refried beans, Macho Sauce, tomatoes and red onion


Blood Orange Frost~
by my daughter
In Vita Mix add:
2 blood oranges
4-5 ice cubes
blend and enjoy!
Avocado Spinach Soup
1 avocado
3-4 c. spinach
1/4 of a cucumber
1 roma tomato
lemon juice
jalapeno
salt to taste
blend until smooth
soaked dulse...cut up on top

Raw Pizza's, Green Smoothie and Minty Snowball Truffles!!

If you've been reading my blog you know that I have been making Sweet Onion Bread. In this new batch I've added nutritional yeast, so I'll call it Cheezy Sweet Onion Bread.  This bread is so versatile. 
We've also been eating raw almond butter on it, which is very delicious.
Above is my teenage daughter's creation for lunch today.

Raw Mushroom Pizza
on Cheezy Sweet Onion bread she has placed dehydrated cheeze slices, marinated mushrooms and crumbled dehydrated Macadamia Creme (taste like parmesan)

Raw Agave Nectar
EV Olive Oil

Cheezy Sweet Onion Bread
topped with Kale Salad with Baby Bella's that I had added 1/2 an avocado and massaged into the kale salad
This was my morning
Green Smoothie
1 c. water
1 blood orange
3 c. spinach
1 c. frozen mango
small piece of ginger
vanilla creme stevia



Before my workout today I felt like I needed a boost of energy, but not a meal...so this is what I mixed up in my food processor

Minty Snowballs Truffles

1 c. raw walnuts~ground in food processor

add a few at a time:
1 c. pitted dates
then
add:
1 c. raw cacao
dash of salt
then
add:
3 drops of peppermint oil
then drizzle
water into food processor to make sticky enough to roll into balls

Roll into balls and roll in unsweetened coconut

Sweet Onion Bread and Another Kale Salad

This was our centerpiece for the day and what was left went into our dinner salad tonight.
Another
KALE SALAD WITH BABY BELLA'S
1 head of kale de-stemmed and shredded
1 package of baby bella's sliced
handful of red onion diced
Bragg's Liquid Amino's
lime juice
EV Olive oil
after the picture I added some diced red and yellow peppers from our veggie tray

This salad was the best!
I had some in a bowl and mixed in 1/2 of an avocado and spread it on my Chipotle Cheezy Flax Bread and it was better than any raw pizza I've had! sorry no picture...

SWEET ONION BREAD
I doubled my recipe and used sweet red onions instead of yellow/white
makes two trays of bread

Mix together in large bowl until seeds gel~
2c. ground golden flax seeds
2 c. water
2 t. salt

Add:
5 carrots chopped up in Vita Mix
4 large red onions sliced in Food processor
3 T. EV olive oil

mix together with hands until throughly amalgamated
dry on one side, flip and dry until desired doneness and cut up with kitchen scissors
my bread is moist but firm and delicious
The Eggplant Fakin Maple Bacon was really good on it

If you look very close in the picture above you can see a bit of kale in my bread.  There are times when I have my dehydrator going non stop.  Sometimes I leave the crumbs or remanants of the last goodies on the sheet rather than washing it, because it may add to the flavor of what I'm making.  So one side of this tray of bread will have nutritional yeast and kale baked into it. Sounded good to me.
After this I did wash my sheets because I am drying Honey Cinnamon Walnuts and Almonds.  I'll try to post pics and recipe tomorrow.  I am looking forward to sharing some of these with my Mother in Law. She really likes the walnuts.

Fakin Maple Bacon and Mexican Casserole

I've been craving some fakin bacon for some time now, so this is what I came up with today.  I usually like to use two eggplants and store the extra in the fridge for another day or to crumble on a salad.
This turned out very good!

FAKIN MAPLE BACON
2 eggplants sliced on mandolin

Blend the following ingreds in blender and pour over eggplant to marinate for an hour or two
3/4 c. extra virgin olive oil
1/4 c. apple cider vinegar
2 T. raw agave
2T. pure maple syrup
Black pepper to taste
spread  eggplant on teflex sheets dehydrate @ 105 degrees until crispy

I like to throw together different cooked vegan casseroles for my family when I get tired of hanging in the kitchen....Here is what I directed my daughter to place together while I made the bacon
EASY MEXICAN CASSEROLE
 FOR THE KIDS

1 can of Amy's spicy chili
1 can of organic chili beans
some leftover lentil/rice casserole or soaked bulgar
taco seasoning
nutritional yeast
Daiya Mozzarella cheese
Ezekiel sprouted tortilla's

layer
tortilla on bottom
1/2 can of chili & 1/2 can of chili beans
lightly sprinkle taco seasoning
nutritional yeast
rice or bulgar
Daiya cheese
tortilla
other 1/2 can of chili and 1/2 can of chili beans
taco seasoning
nutritional yeast
rice or bulgar
Daiya Cheese

bake at 350 for 30-40 mins



NACHO CHEESE~
I used taco seasoning instead of chili powder
thank's goes to Averie for the recipe
1/2 c. hemp seeds
1/3 c. sunflower seeds
1/2 red bell pepper
1/4 c. nutritional yeast
1/2 t. taco seasoning
pinch of cayenne pepper
3 T. lemon or lime juice
1/2 t. himalyan salt
water to thin to desired consistency
Blend all ingredients in a Vita-mix until smooth and creamy

We had the dip with some Salted Flax Cracker's from Ani Phyo's new book.  I changed her recipe up a bit and added Chipotle Mrs. Dash and nutritional yeast for a nacho cheese flavor.

Get Alkalized!!

Alkaline Lunch!
Beet Salad, Oriental Kale Salad and blended Soup/Salad

Oriental Kale Salad
2 bunches of kale cleaned and shredded
1 red bell pepper diced
handful of raw pumpkin seeds
1/4 c. extra virgin olive oil
1/4 c. lime juice
garlic to taste
Chinese Five Spice~lightly sprinkled over the top


Blended Soup/Salad
2 roma tomatoes
2 large stalks of celery with leaves
2 big handfuls of Gourmet Salad Greens
1" of  fresh jalapeno with seeds
lime juice
water to make it blendable
I blend mine of #3 of my Vitamix for a soupy coleslaw texture.  You can blend it to a smooth consistency if you like.
Sprinkle with dule and nori granules

Today I also had some Super Green Juice made with tons of kale and kale stems, broccoli stems, collard green stems, celery, cuke, beets, lemon, ginger and stevia
and
Carrot, apple, ginger juice
and a
Green Smoothie
raw almond milk
1/3 of a banana
handful of berry blend~raspberries, blackberries, blueberries
2 handfuls of spinach

So far it has been an alkaline day!

Did you know that almonds are alkaline and contain calcium?
Fresh Almond milk is a great substitute for cow's milk.

Tempeh chicken style and Honey Mustard for the Kids! & Cheezy Broccoli Soup

Tempeh Chicken Style
In skillet heat:
coconut oil
Bragg's Liquid Aminos
Poultry seasoning
dash of sage

When heated add:
slices of tempeh and brown

Honey Mustard Sauce/Dressing
1/2 c. dijon mustard
1/3c. raw honey
1/3c. raw agave
4 T. extra virgin olive oil
Blend in Vitamix and add water to desired consistency


Non Dairy Cheezy Broccoli Soup

3-4 garlic cloves
1 med. red onion halved and sliced thin
1 celery stalk diced or 1 T. dried celery
coconut oil.
Saute these ingredients


3 c. broccoli florets, separated, stems chopped into 1/2" rounds
or pulse in food processor until small chunks (peel tough fiberous skins off)
32 oz of low sodium Pacific veggie broth plus 2 vegan veggie boullion cubes or use 2 t. Seitenbacher Veggie Broth Powder)
4-5 c. water
1 handful of shredded carrots
1 handful of dried celery leaves
1/2 c. nutritional yeast
2 t. lemon juice
2-4 t. Annies Worchester sauce

Add all other ingredients except lemon juice and simmer until broccoli is al dente.
Add lemon juice just before serving.
Ladle into bowns and put a dolop of Ranch Dressing on top

Ranch Dressing

1 c. Vegenaise
1 t. garlic powder
1 T. dried onion
2 t. lemon juice
1/2 t. sea salt
3 T. water

Blend until smooth and creamy...can a bit more water if needed.

My raw vegan son worked on our pre-made salads and had some nori rolls today....
green smoothies for b-fast and lemonade for in between
I had a smoothie, blended salad, raw fudge and some of the broccoli soup
