First CSA day of the Season!!

Yesterday was the first day of  the CSA which I facilitate and host at my home.  I love this time of year when  we receive super fresh (picked that morning!) vegetables.
I had a grand time setting up things yesterday and meeting and greeting all of our last year's members and newbies!

The contents of our boxes included:
oregano
thyme
 chives
leaf lettuce
spinach
 baby swiss chard,
green onions,
radishes
white sweet potatoes
 and asparagus!
Wow!!!  What a great start to the season!

No pictures this time as it was a super busy day for me and my family...I also had a couple contractors at my home during our pick up hours.
If you live in my area, it is not too late to join the CSA.  Contact me through Facebook at Eat Well Fitness  or you can go to Local Harvest.org to find a CSA near you.

CSA Share Week #21, #22 and #23

As you can see the harvest has been plentiful.
I've been preoccupied with a group order I am putting together, therefore it has taken me awhile to post pictures.
We have received lots of greens~including mustard greens, swiss chard, spinach, lettuces, broccoli, cilantro, dill, basil, parsley, arugula, Chinese cabbages, green beans...sweet potatoes, peppers galore, tomatoes and a little squash
There are several items I have not listed...

We have a light frost yesterday and we are expecting warmer weather at the beginning of the week, so we should continue to reap a good harvest til the end!

A New CSA in the Neighborhood!

I have been involved with a CSA (Community Supported Agriculture) for the about 7 years. I drive about 16-18 miles into town to pick it up, but it is worth it!  CSA's are a great way to support your local farmer's and get fresh, chemical free produce.  (always ask how they grow their food)
click on the links to find out about CSA's and look for one in your area.
This summer I was asked by a local farmer to help get a farmer's market in our community, so I jumped on the bandwagon!  Now after introducing fresh local produce to our neighbors our farmer is ready to introduce them to a  CSA.   Our farmer brought a 1/2 share of produce to the market today to show people what they might receive in their weekly box.  It was the end of the day for our farmer's market so I asked to purchase the box.  The cost was $12!!!  This was the regular price for anyone purchasing 1/2 share.  As you can see this is an abundant amount of produce for that price.

Pictured from top right and clockwise~
large bunch of red beets with tops
collards
kale
basil
sweet peppers
parsley
sweet potatoes
1 turnip with greens
mustard greens
radishes in the center

Again I want to say that this was only 1/2 of a share!!!

If you live locally and want to participate in a CSA message me and I will be glad to help you get plugged in!

bag of sweet potatoes
kale
bag of mixed salad greens

Basil~a gift from a friend!
I am dehydrating it for the winter
Pictured are dehydrated sweet peppers.  The aroma in the house is amazing while these are drying!

SUN-BURNED BELL PEPPERS & WHAT TO DO WITH THEM

The picture below is how they looked before I sliced them in the food processor and the images above are what they looked like before removing the sunburned spots.  Most folks would not want these peppers, but they are perfectly fine.  Sometimes they will get sun-burnt in the field, just like we burn when we are out in the sun too long.  I admit they do not look appetizing, but they taste perfectly delicious after removing the spots.

Blend everything but the kale until it is creamy and pour over kale and massage into it and let it sit for 10 mins.
spread on Teflex sheets and dehydrate at 115 until crispy.
I had some leftover sauce so I cleaned and de stemmed some rainbow chard and used the rest of it on it. I'll let you know how it turns out.

Sweet Potato Lentil Soup

put all ingredients in a pot and bring to a boil, then simmer until done
I try to make my soups early in the day and then place them in the crock pot on warm then they are always there waiting to be eaten
or my favorite way to make soup is to place all the ingredients in the crock pot overnight on a low setting and it will be done in the morning, then stir the ingreds and set to keep warm setting

Here is an idea for using your fresh Basil

Basil Pesto

In Vita-Mix, food processor or Magic Bullet place:

I have not been posting much lately.  Life has been pretty busy and I want to buy up my time with my children, as they soon grow up and move on.
Life is more than fruits and veggies.
Priorities are one thing in life that seems to shift out of place over again.  It is good to evaulate our priorities on a regular basis to make sure we have not moved too far from the most important people or things in life.
Sometimes our life get so busy we neglect the most important for the things that we think need to be done when in reality they are the distractions that keep us from making the best use of our time....Someone once told me that the most important things in life are
RELATIONSHIPS
1st God
2nd Family
you get the picture....
make your own list and look see how you are doing and make adjustments

Thanks for reading...
