Crunchy Pea Salad~ Double Cacao Nib Ice Cream~

Yesterday I made a recipe similar to the one that Charlene Faris turned me on to, back in 1996. I met her at our local library. She was giving a free class on vegetarianism. I have changed it up quite a bit, but that is what is great about vegetables...they mix together so well.

CRUNCHY PEA SALAD

1 c. cooked or soaked quinoa
1-2 c. frozen peas (the more peas the sweeter)
4-6 garlic cloves~minced
1 large green onion~they whole thing~chopped
1-2 bell peppers
2 celery stalks diced
salt & pepper to taste

make italian dressing
olive oil~drizzle over it
lemon juice~splash
balsamic vinegar~splash
oregano
basil
dash of rosemary/thyme
I also added some italian blend herbs (pre-mixed)

sorry no measurements on the dressing...I just eyeball this

Mix this together and be amazed...it is delicious....and pretty much a complete meal


While checking my Facebook page today a friend mentioned she was eating cacao ice cream for B-fast....sounded good, so I hit the kitchen..

DOUBLE CACAO NIB ICE CREAM

1 1/2 frozen banana's
splash of unsweetened coconut milk
1 t. lucuma
approx. 1 T. of cacao powder
nibs to taste

I blended this in the Vita-Mix using the plunger and my son and I enjoyed a good serving of this and topped it with hemp seeds...
This made about 1 1/4 c. total...two reasonable servings of soft serve

I visited one of our local Farmer's Market's today...I was a little late, so I missed the greens...believe me, when I say I do not need anymore...
When my husband and I got married 10 1/2 years ago we were blending two families...5 children~3 boys and 2 girls...so we decided we needed two fridges...well since then we have acquired two more. Since we always buy in bulk this is very practical for us.. Right now, one of them is full of kefir water...seems it produces more than we can keep up with right now. I have to hibernate my grains..anyone know how to do this???
Anyway, back to the Farmer's Market. I purchased 4 cucumbers and a basket of beets. I love to be able to eat the skin of my cucumbers, and when they are fresh they are so crisp. I am soaking the beets right now to get the dirt off of them and I'll be making a beet salad for later. Spring Vegetables are so cleansing for the internal organs of the body. Take advantage of what is in season....and eat it raw if you can.


today's eats~

a.m. superfood smoothie~the usual

handful of strawberries

2 slices of gluten free bread with mustard, raw milk cheese and a sliced tomato

Calcium Salad(Kale/Chard with sliced cucumbers added and Gomasio

Double Cacao Nib ice cream

Crunchy Pea Salad

garlic hummus and baby carrots

Dear Kathy: Wow, was just running my usual search on myself and found your comment here..am totally amazed and so appreciate your giving credit to my recipe....I hope I had said in the class or demo that one can adapt the recipe however they wish. I did a demo using this salad over two years ago now at the Zionsville library where I lived many years. In fact, was living at Zionsville when you had seen me and had done several food demos at that time at the Lebanon library as well. If you are on Facebook, kindly add me in.
