Cacao Fudge

My daughter and I just whipped this up for a treat today!

Cacao Vanilla Fudge

1 1/2 c. of raw almonds (soaked for 1 hr. and then air dryed)~soaking is optional
1/2 c. raw tahini or raw almond butter
3 T. raw honey or agave
1 1/2 t. vanilla
2 T. cacao powder (you may use carob or cocoa powder)

Process almonds in food processor and then add tahini, honey, vanilla. Process until it is well mixed. Add cacao powder and process. You may need to add a tiny bit of water to get it to mix. Don't add too much.
Remove from processor and use hands to mix thoroughly if needed and then press into a small glass baking dish. Refrigerate for at least one hour if you can wait. Cut into small squares. You may also roll the mix into balls and coat with unsweetened shredded coconut, cacao, carob or crushed nuts.

Be creative with this recipe~ you can give it a different flavor by eliminating the cacao and using organic peanut butter instead of the tahini for PB fudge or use walnuts instead of almonds...nuts are very versatile...use your imagination and see what you come up with...afterthought...make two batches..one peanut butter, one cacao...cover the PB balls with the cacao for a chocolate peanut butter cup/ball version...mmmmmmmmmm
