6 bunches of celery
4-5 swiss chard leaves & stems
handful of beet leaves & stems
2 zuchinni
1 large cucumber
3 big chunks of ginger
lemon juice
liquid stevia

this juice is so salty...I got some really good celery from my Indy Fruits ( a ocal distributor~where we buy in bulk)
This make almost a 1 1/2 gallons of juice....my son is helping me drink this...Today he is working outside with my brother for his lawncare business...so this will be a good hydrator for him.

Yesterday, someone on facebook posted a sprout recipe...when I went back to try to locate it...I couldn't find it....so here is my version

Sprout Salad

1 container of alfalfa sprouts
1 container of broccoli sprouts
2 large carrots diced
3-5 celery stalks diced~mine were small so I used a lot
5 dried basil leaves~crumbled

Indy Fruits ~Bulk order

1 case of organic celery
1 case of on the vine tomatoes
2 bags of organic granny smith apples
2 containers of organic strawberries
7# of organic Jewel Yams
I ordered 5# of clover sprouts but they were bad....wet and slimy....yuk...returned to distributor for credit~if you read my previous post you will know that I went to our local grocer and purchased several containers of alfalfa sprouts for 49 cents ea...I also got a couple broccoli spouts for 99 cents...so we are sprouting it up!!
alfalfa is sooo good in smoothies!

Co op Order

10# of 5 grain granola~my husband takes a jar of this to snack on while working his labor intense job
4 liters of Volcano organic 100% lemon juice~I got tired of jucing so many lemons...this is one of my time savers
1 case of Ezekiel sprouted grain tortillas
2 liters of Napa Valley organic Extra virgin olive oil
Frontier taco seasoning.....this is great to make taco meat with walnuts or for southwest salad dressing
1 case of Guiltless Gourmet Baked yellow tortilla chips

Fed Ex just knocked on my door and left me a package....I love to see UPS or Fed Ex drive up....
my husband's Nutri biotic Vanilla Protein Powder was on board.
I am also awaiting UPS for a delivery of Pines Wheatgrass powder...I recommend fresh pressed wheatgrass...but this is the next best thing...TIME is of the essence....Because I work a couple of  days a week and teach my daughter at home...need time with hubby and son, exercise...run a household...and I'm studying to be a naturopath....I have to make choices that fit for our home life ...  you don't have to do everything perfectly to eat heathfully...set your priorities....make God and People most important....then work out how you can accomplish your other goals with the least amount of stress...pray for wisdom...and remember not to compare yourself with others....

Trust in the LORD with all your heart and lean not to your own understanding....
Seek wisdom from above.....

He also did our share of helping for a four hours time slot during the delivery.    Each week there are three time slots from 9am to 6pm with volunteers that  come to help make our Community Supported Agriculture happen.  Some of the duties are: unloading the truck, organizing produce, setting up the area, posting on the dry board what each share receives, setting aside extras that have been pre-ordered. Raw milk cheese is delivered and are labeled and some of the wheels of cheese are cut up and divided and re-packaged.  Homemade grapenuts come too...they are made with soaked grains and succanant....delivered and labeled are organic free range chicken eggs,  raw milk, raw goat milk....maple syrup is set out & labeled for special pre-orders.

1 head of romaine
1 container of strawberries~frozen

My son has been a very strict vegan for some time now and he is ready to go super high raw!!
This is such an encouragement to me.  His goal someday is to be in the alternative health field.
He is taking college exams at one of our local colleges, while studying at home.  This is a very cost effective way to get a degree.  It is called CLEP~college level exam program.  It has been around for years.  They started it a long time ago for the older crowd that needed to go back to college to get additional education or additional degrees.  Your guidance counselor will not tell you this is available...but you can get a 2 year business degree or other degrees without even enrolling in college.  My son began this his junior year of high school and was half why there before his senior year...so I graduated him a year early and he is just about to complete his 2 year degree!! saving himself TIME and lots of $$$.  Google it and find out how you can do this...if you have a child that is homeschooled you can get started earlier than after High School or if you child is considering college this may be an option for him/her.
Back to his health career...while studying for his CLEP exams he is also doing some self study programs in health & wellness.  So he is feeding the family all of the info he is reading!!! Yippee!
This is a good refresher course for me and also an encouragement or irritation to the rest of the family...hehehe!!

Sampling of some of my CSA Share

Most of the above pictured items were part of one of my CSA shares.  It appears that all of the above, are technically fruits.  I generally have baby carrots and celery on hand in addition to my CSA share.

I  try to keep a tray of fresh fruit and veggies on the table for my children and I to enjoy during the day. This is a great way to keep bad food cravings away.
Stop by your local farmer's market soon to enjoy this years season of local vegetables.
Don't forget to have your children to help assemble your tray...by choosing the fruits and veggies of the day.
Believe me, they tend to enjoy them more if they get to participate.

Snackin' desserts~

Banana Surprise

2-3 banana's sliced
Cacao sauce/syrup
pecans or favorite nut
unsweetened coconut flakes (optional)

my family added the coconuts flakes to their individual plates after serving

This is a super easy and fun snack/dessert

You can also cover and freeze these gems for an extra special ice creamy dessert

Cacao Sauce/Syrup

3 heaping T. raw cacao powder
3 T. honey or maple syrup, agave or a mixture of any of these
1 t. vanilla extract
tiny pinch of salt

mix into a creamy sauce and add water to desired consistency

Don't let your Cacao Syrup/Sauce go to waste...add some raw almond butter (or nut butter of your choice) to thicken into a nice fudge...it can be eaten as is with a spoon or placed in the fridge or freezer for a more firm version
optional: cacao nibs, coconut flakes, goji berries ...whatever you like

Summer Salad, Juicing and Potato Kale Soup

If you are trying to figure out what to do what all of your summer squash~try this salad.  You can eat it as is or use it to top your garden salad. This salad is delicious and refreshing and NO OIL...it doesn't need any.

Summer Salad

1 large zuchinni~matchsticks or chopped
1 small yellow squash ~matchsticks or chopped
1 small red onion diced
1 c. of grape tomatoes halved
2 large pieces of garlilc~minced
parsley
real salt
fresh ground pepper
balsamic vinegar
Mix and let marinate for a few hours in fridge.

For the past several weeks I have not been juicing and I can feel a difference, so I juiced today~

celery
cucumber
zuchinni
swiss chard
beets
ginger
lemon
liquid stevia

I have also been eating a bit more cooked foods since I began working out. Knowing that this creates a more acidic state than I am used to, I am wondering if this is the source of the wrist pain I have been experiencing.  It seems that after I stopped juicing is about the same time the wrist pain began...so hopefully by eating a more alkaline diet with less cooked foods, juicing and staying super High Raw, the  problem will be remedied.

My family still eats more cooked foods than I do, so I made Potato Soup as a special request from my son today..
This is a recipe I created a few years ago that  is one of my family's favorites

Potato Kale Soup

Using a food processor slicing attachment (on the same attachment as the shredder-just upside down)
Slice:
1 vadalia onion
2 large carrots
2 stalks of celery
2 -3 potatoes (I used Yukon Gold today)
sometimes I shredd a bit of cabbage (optional)
I put each item in the stockpot as I go and then fill it with the appropriate amount of water to cover and then some.
add: 5 heaping T. of Seitenbacher veggie broth powder or use unchicken broth and skip the water
2 T. dried parsley
pinch of cayenne pepper
a couple shakes of poultry seasoning herb
salt to taste

bring to a boil and then turn down the heat to simmer until it is al dente...
then add 3 -4 c. of shredded Kale stir kale into soup and it is ready to serve.

If you want to make this creamy you can add some Vegenaise..

I am currently working on phase 3 of P90X... and power walking 2-3 days a week...add to that my cleaning job in which I normally work it pretty vigorously for at least 4 hrs. two days a week.

Ice Cream Cake for B-day celebration!~Vegan~but not raw

For years around our house I have tried and tried to make fun treats for B-day's..One year all of the kids had Manna Bread as a b-day cake.  I think they liked this one much better. One of my family members had a birthday recently and this is the ice cream cake I made.  Soy is not a typical staple around our house, but I did use So Delicious Ice Cream on this cake for lack of availability of my  first choice .  A better choice would be Coconut Milk Ice Cream.  On the bottom of a glass baking dish I crumbled Back to Nature Peanut Butter Sandwich cookies.  Next layer was So Delicious Chocolate Velvet, then a layer of Paul Newman's Chocolate Sandwich Cookies and on top of that is So Delicious Vanilla Bean. On the very top is more Paul Newman's Chocolate sandwich cookies.  I placed this in the fridge for a bit so the ice cream could melt and fill in the empty spaces and then to the freezer it went until the party!  Everyone was very happy with the cake....especially my vegan son!  You can use raw ice creams and raweo's for the cookies if you want 100% raw.  BTW~this is a great one to take to a family dinner and no one will know that it is vegan..  :)  and your kids can still have something sweet to eat....

Puppy Picture!! and Lemonade Julius

After my morning power walk today I came home and made this recovery drink from my leftover strawberries and blueberries from yesterday.

Strawberry~Blueberry Lemonade Julius

In Vita~mix or blender
2 c. of a mixture of fresh strawberries and blueberries
1 lemon juiced or 1/4 c. of 100% organic lemon juice
water level in Vita Mix container at 2c.
1 squirt of liquid Sweet Leaf Stevia
one handful of ice cubes

blend, pour and drink!!  Be creative with the fruits you have on hand for your Julius

I buy my liquid Stevia from Amazon subscribe and save and get two 4 oz bottles for $19.18.  This is a great savings and they bring it right to my door!

While drinking my Lemonade I made some Raw Almond Milk. Click here to watch a video showing how to make it.
I usually make a fruit salad for the family to graze on during the morning hours.  This one had strawberries, blueberries, blackberries, mango, heirloom oranges and the children topped it with unsweetened flaked coconut.

After our morning meals we headed out to run some errands and take our new puppy to the vet for his first check up. From there the pup had his first visit to the pet store for some treats and to pick out some toys.  He did great for his first car ride so we are hoping to take him with us from time to time.  Our other two dogs do not travel well and usually leave quite a mess in our vehicles.
When we got home I needed some nourishment.  Pictured above is my blended soup~sorry the lighting was too bright.

Blended Soup

all the veggies were on my veggie tray from yesterday...so in the Vita Mix they went:
handful of cucumbers
carrots
celery
grape tomatoes
a piece of jalapeno
I added some lemon juice
Blend

I topped my soup with Annie's Goddess Dressing and Dulse Granules

Annie's Goddess Dressing is the best bottled tahini dressing I've ever eaten.. This can be used as a dip, dressing or added to pasta salad. You can purchase this at the subscribe and save cost of $20.12 for 3 one liter bottles or pay $3.99 at the grocery store for 8 oz. so if you figure it out...you are only paying $2.39 cents for 8 oz....that is a savings of $1.59 per 8 oz bottle or you can look at it this way...if I bought the the total of 3 one liter bottles at $3.99 per 8 oz I would end up paying $50.57 or I could do subscribe and save and pay $20.12  and I save $30.45..  This is why I love subscribe and save!!!!  If you can not use that much dressing or whatever you do on subscribe and save, find someone else to share the cost and the savings!
If you follow the links below look below the pricing for the subscribe and save link to get this savings.
Same goes for the Liquid Stevia...subscribe and save cost is $19.18...one bottle at $9.59 or go to the store and pay $15.99 or more....Subscribe and Save...Thanks Amazon!!!

B-fast~lunch~dinner for the day!!

I am really enjoying my breakfast puddings.  Today's ingredients are:

2 c. strawberries
1 c. blueberries
1/2 frozen banana
1 t Pure Planet ~Just Barley Powder
1/2 t. HealthForce Nutritionals~Spirulina
1heaping T. Manitoba Hemp seeds
dash of cinnamon
dash of stevia
a couple leaves of dried mint

blend until creamy!!

Spirulina is an exceptional source of complete protein (60-65% Amino Acids) vitamins, mineral, trace elements, enzymes, chlorophyll, phytonutrients, DHA and GLA and other fatty acids.  Unlike animal proteins which are hard on your kidneys,  Spirulina is gentle and it has been shown to protect against kidney failure.
Spirulina is an acquired taste, but if you add it to a smoothie it is easily hidden. Find the benefits of Spirulina here.

This is a super breakfast! The fruit is full of antioxidants and vitamins, etc.. The hemp seeds are full of protein and omega 3 & 6's. Click here for the nutritional profile of hemp.   Just Barley is one of my all time favorites. It is 100% organic and it is dried at low temperatures..below 80degrees so as to maintain the enzyme integrity. It has no fillers, binders or anything but Barley Juice Extract. It has a very pleasant taste and sometimes I just eat it off the spoon! The 80gram jar has 80 servings, so it is very cost effective. When you don't have time to juice or just want to detox or alkalize your body...drink Barley Juice!!!  Here is an article from, "Healing Cancer Naturally" that expounds the benefits of barley grass!

Quesadella with Daiya Cheeses!!!

I made this picture to show you how great  Daiya Cheeses melt. I hope that you are able to see this, as I am sure it does not serve it justice.  This cheese is creamy and it stretches but does not stick to the roof of your mouth like glue as some of the other vegan cheese do....this stuff is awesome...
Ingredients:
Dayia cheddar and mozz. cheese
Ezekiel sprouted tortillas (large)

fresh tomatoes, cilantro, garlic, dash of real salt, lemon juice, jalapeno
Sour Supreme~mock sour cream...dairy free
fresh guacamole~avocado, garlic, tomato, jalapeno, onion powder, lemon juice

Beet Salad & Greens

2 bunches of beets shredded
handful of beet greens shredded
1/3 c. of lemon juice
1/3 c. olive oil
5 large garlic cloves minced
dash of cloves powdered
real salt to taste

when shredding the beet greens I sit aside the greens and dice the stems and add them to the shredded beets.
Mix all ingred except the greens together and let marinate.

on my plate is: beets salad on the side of the beet greens topped with raw sunflower seeds, sliced cucumber, grape tomatoes, yellow bell pepper and sprinkled with Dulse granules...
This was a yummy and filling meal.

This was my menu yesterday.  I did eat additional fruits & veggies as snacks and had some lemonade and I never miss my morning smoothie.

Today~most of my family ran in a 5K at one of our local parks.  Fun and sweat was had by all!
Enjoy your weekend!

Recipes and Pictures!

Barley Mint Superfood Breakfast Pudding and Cacao Vanilla Fudge~that's what's for B-fast..............Yummy!
Who says you can't eat dessert for breakfast?

Barley Mint Breakfast Pudding

In the Vita-mix or blender process until creamy:

1 small banana with about

2 c. of

mango

strawberries

blackberries or blueberries

1 heaping teaspoon of Just Barley Powder by Pure Planet

1 T. Manitoba Hemp Seeds

Blend and top with minced spearmint leaves or dried mint.

You may want to place it in the fridge to make it good and cold, if you are serving it to your children. This will allow the flavors to meld a bit more, especially if you are using dried mint leaves.

CACAO VANILLA FUDGE

1 1/2 c. of raw almonds (soaked for 1 hr. and then air dryed)~soaking is optional

1/2 c. raw tahini or raw almond butter

3 T. raw honey or agave

1 1/2 t. vanilla

2 T. cacao powder (you may use carob or cocoa powder)

Process almonds in food processor and then add tahini, honey, vanilla. Process until it is well mixed. Add cacao powder and process. You may need to add a tiny bit of water to get it to mix. Don't add too much.

Remove from processor and use hands to mix thoroughly if needed and then press into a small glass baking dish. Refrigerate for at least one hour if you can wait. Cut into small squares. You may also roll the mix into balls and coat with unsweetened shredded coconut, cacao, carob or crushed nuts.

Enjoy!!!

This is another picture of my Barley Mint Superfood Breakfast Pudding~this one has been blended down to a smooth consistency.  The picture at the top is a different variation. It is partially blended.  It was made with blueberries instead of the blackberries listed in the recipe....this picture is actually the one made with blackberries.  Use whatever berries and other fruits you have on hand to create your own Superfood B-fast Pudding.

I finally figured out how to post my pictures!  Previously my daughter took care of this for me...but she married and moved away.......but now that I kinda know what I'm doing I'll be posting more pictures of my food creations...

Spicy Cabbage Salad ~one of my Children's Favorites

Up with the dogs this morning. We have three of them. The oldest is a Lab and Rottweiler mix, #2 is a Black Lab Mix and #3 the puppy and our newest addition showed up on our porch a couple weeks ago is possibly some type of Akita mix. We are now in the puppy training mode...funny, it makes me think of child training days...consistency is key!

This morning I decided I better make use of all of the green cabbage we have so I made one of my children's favorite salads. I'll call it Spicy Cabbage Salad.

SPICY CABBAGE SALAD

1/2 head of green cabbage sliced thinly in food processor~not shredded
place in large bowl and add:
3 avocados
1/3 c. of lemon juice
chopped jalapeno's to taste

mix with your hands and then add:
1/4 c. Veggie sesame seasoning salt

Veggie Sesame Seasoning Salt

1/4 c. ground golden flaxseeds
1/4 c. ground unhulled raw sesame seeds
1/4 C. slightly ground onion flakes
2 t. garlic powder
1/2 c. of Seitenbacher Veggie broth

Mix together and store in the fridge or freezer

Today my daughter's plate was filled with blueberries, a couple strawberries, sliced cucumbers, orange bell pepper strips, black olives, grape tomatoes, Annie's Goddess dressing for dipping, Spicy Cabbage Salad
and one slice of Sesame Ezekiel Bread lightly toasted with Earth Balance soy free buttery spread, powdered stevia and cinnamon.  I had a plate too!

X Stretch and walked one of the dogs today...
