Review of Angel Foods, Cleansing Smoothie and Almond Fetish-Cheese

Pineapple Celery,
  Beet & Carrot Smoothie
1 c. fresh pineapple
1 c. chopped celery
1 heaping t. beetroot powder
1 heaping t. carrot powder
1 squirt of vanilla cream stevia
handful of ice
Blend in Vita-Mix

This is very refreshing, cleansing, and hydrating!!!
I had to drink 3 of them!

Cherie Soria is an internationally know vegetarian cook and I understand why, now that I had read her book.  Cherie has the best of raw and cooked,  in an uncomplicated vegetarian/vegan recipe book.  I enjoyed the simplicity of the recipes and she uses ingredients that you may have on hand, or that are easily found. 
The first ten pages is an introduction to living foods and their benefits.
You will find a list of kitchen gagets, definitions of food ingredients, sprouting instructions and charts. She also discusses how our attitudes/energy have an effect on food values.
 As I stated before, Cherie's manner of writing is uncomplicated, and she gives clear instructions. 
You will also discover that Cherie prays to Angels, as she has included prayers on each recipe page.*

As I was reading and deciding which recipes to make, my thoughts kept coming to Ani Phyo's book Raw Food Essentials because of the simplicity of her recipes and the ability to make them your own.  I find this same adaptabililty with Cheri's recipes.

I also found some new recipes that greatly appealed to me...such as almond and cashew & seed yogurts, kiefer and Almond Feta-ish Cheese (which I made pictured below).

This book is for everyone trying to make or maintain healthy food choices in their diet.  Cherie's got it covered for cooked and raw food families with easy to prepare recipes.  These recipes could easily be made by your children...and you know that I highly recommend involving your children in food prep.
This book is one that I will be using on a regular basis.

This cheese is delicious.  I modified it by using almond pulp and it is fantastic!!!
With the addition of more nutritional yeast it has the flavor of smokey cheddar!!

CSA, Rejuvelac, Mexican Nori Crackers, Cheezy Cauliflower Salad, Nacho Chips

CSA is Available!!!
This was my first special order....
1 bunch of green onions
 (they were so large, my daughter thought they were leeks!~I told her they were from Canaan)
1 bunch of radishes
3/4 lb of baby swiss chard
1 lb of spinach
2 lbs of lettuce mixture

Our first official CSA portions is expected around May 18th...until then we are able to place special orders of what is available
Everything is delicious...I juiced some of the spinach in my 1 gallon of
Green Juice
today~no pic
4 bunches of celery
1 lb of spinach
1 bunch of beet tops
stems from 2 bunces of kale
outside leaves from 1 head of cabbage
6 granny smith apples
3 big pieces of ginger
1 c. of lemon juice
liquid stevia to sweeten
delish....and very mild


REJUVELAC
2 c. of wheatberries~soaked, sprouted
after the tails are as long as the wheatberries, rinse and fill jar with filtered water, cover with cloth and let sit on counter 2-3 days until a foamy film develops on top...pour off rejuvelac into sterile glass containers, place in fridge
add more water to berries and let sit on counter and ferment one day...pour off rejuvelac and compost wheatberries.
Rejuvelac has a tangy fermented taste that reminds me of whey...the real stuff...


therefore I decided to make some
Fire-y Lemonade with it!
juice of one lemon
dash of cayenne pepper
4 oz of rejuvelac
squirt of liquid stevia
water & ice
mmmmmmmmmmm....much better!

A little sprouting going on~
from top left~alfalfa, radish, wheatberries, mung beans, sprout salad mix (red and green lentils, radish, alfalfa)

MEXICAN NORI CRACKERS

On nori sheets spread not-Refried Beans and on top of that spread Macho Nacho Sauce
place in dehydrator and dry at 105 until slightly dry, then cut with kitchen scissors into cracker size
remove from teflex sheets and continue to dry until done

Final product~Mexican Nori Crackers!!!  These sound weird, but they are delicious....
I say never let your nut cheeses go to waste...dry them in the dehydrator and crumble on top of salads or smear them on a nori sheet and make crackers!

Yummy Kale Salad
2 bunches of kale
1 extra large green onion
2 radishes
3 baby carrots
4 small garlic cloves
sprinkle of Himalyan salt
1/2 c. of lemon juice
massage until wilted and then add:
1/2 c. olive oil
and 1-2 t. dulse granules

My Salad from top left
guacamole~avocado's, red onion, vine ripe tomato, garlic, lemon juice
chopped red beet, 4 baby carrots, 1 celery stalk
kale salad
cheezy cauliflower salad
on a bed on green lettuces and baby swiss chard
sprinkled with dulse and more nutrtional yeast

CHEEZY CAULIFLOWER SALAD
1 head of cauliflower chopped
1/2 c. red onion chopped
2 garlic cloves minced
1 c. nutrtritional yeast
1/2 c. lemon juice
1/2 c. olive oil
dulse
salt


Yesterday's Salad
baby chard
spinach
kale salad
radish
radish sprouts
mung bean sprouts
lentil sprout mix
1 tomato
1 spring onion
garlic
Balsamic vinegar
dulse granules

Healthier than Starbucks..Latte...Veggie Burgers and Nacho Chips

Better than Starbucks
Latte
1 1/2 c. raw almond milk
1/2 T. Dandy Blend
squirt of English Toffee stevia or vanilla cream, chocolate or hazelnut by Sweet Leaf
warm almond milk on the stove or in your Vita-Mix...keep it mostly raw by not exceeding 115 degrees
add other ingredients and blend for one minute (if warmed on stove) or until good and frothy
you can also blend in one date to thicken it a bit
Oh, the wonders of the Vita-Mix!  I use it 6-10 times a day.  It is definitely my most used raw food appliance.

This is an essential book for seasoned or newbies to raw food...filled with basic recipes that you can personalize according to your tastes! This is one of my fav's!


Nacho Chips
one of my take-offs from Ani's Flax Chips
In Vita-Mix
2 c. of roma tomatoes
2-3 c. celery
12 oz of carrot juice
1 T. oregano
garlic
1 T. Mrs. Dash Extra Spicy
Blend until liquified

In a bowl mix together:
4 c. ground of golden flaxseeds
1 c. of nutritional yeast

Pour liquids over dry ingredients.  Mix until smooth and spread on teflex sheets and sprinkle with Himalyan salt ...then dehydrate on one side, flip, score and dry until crisp.
This filled 8 trays in my Excalibur Dehydrator.

Green Lemonade, Ginger Carrots Juice and Energy Soup!

Today I went to Dr. Jean, my dentist (Hi Jean!) for a cleaning and when I got home I hit the kitchen!
Tomorrow I pick up my monthly veggie co-op order, so I needed to make room in the fridge.
This is what I came up with..
Green Lemonade
6-7 cucumbers
4 bunches of celery
1 pound of Spinach from my CSA farmer
3 big pieces of ginger
1 c. lemon juice
3 granny smith apples
liquid stevia to taste

I used two juicers....my leafy greens went in my Green Power Juice and most of the chunky stuff went into my Jack LaLanne.
As you can see this made 1 gallon of green juice.
I immediately drank a  quart...mmmmmmmmm..
 I am recommending this site for information about Greens only.  I am unfamiliar with the products they sale.
As always, I recommend that you do your own research.



After I finished making the green juice, I figured I should use up some of my carrots
 since the juicers were warmed up.
Ginger Carrot Juice
approximately 5-6 pounds of carrots
4-5 granny smith apples
big piece of ginger
This was just a little shy of one gallon.

When I finished juicing it was time for a mid-afternoon meal...hence my
Energy Soup

3 roma tomatoes
5 stalks of celery
big handful of gourmet lettuce mix
handful of baby carrots
sliced jalapeno's
2 heaping T. of tahini
1/4 c. lemon juice
1-2 T. Bragg's Liquid Amino's
little water to make it blend easily
I set my Vita-Mix on 3-4 and let it chop it to a soupy consistency.


I topped it with Dulse granules and had some of my Nacho Chipotle Chips on the side.

Easy Cheezy Peas, Nacho Chipotle Chips, Corn Salad


CHEEZY PEA SALAD

2 bags of frozen peas
2 c. celery diced
1 red bell pepper diceed
4 green onions chopped
1/3-1/2 c. nutritional yeast
1 t. garlic powder
1/8t. dried mustard
Vegenaise to moisten...don't get too much
this should not taste like mayo, if it does add more yeast and spices to taste

VEGAN NACHO'S
bottom layer~my raw Nacho Chipotle Chips
Daiya cheddar cheese~vegan
Vegan sour cream
Tabasco

Nacho Chipolte Chips
thanks to Ani Phyo for the basic chip recipe in her book Raw Food Essential~I changed it up a bit
~place in a bowl mix together and sit aside
3 c. ground golden flax seeds
1 c. of nutritional yeast

In high powered blender liquify:
3 c. water
3-4 c. chopped celery
4 T. oregano
1 T. Mrs. Dash Chipotle

pour liquids over mixture in bowl and mix together..you may need to add more water as it thickens up quite a bit.  spread mixture on teflex sheets in dehyrdrator in a large square.  dry on one side and then flip, remove telfex and lightly salt with ground Himalyan salt and score in triangle shapes.  continue drying until crispy.  You will want the mixture to be about 1/8"....if it is thicker you can use it as bread...or thin out with more water.  I cannot keep enough of these around...they are yummy.  I had some with my blended salad today.
This is what's on my table today for munchies.  I purchased a membership to Costco and found those sweet mini peppers while foraging through the produce department.  Our Costco has some great prices on organic products.  One of my favorite buys was the  Italian Volcano 100% lemon juice...it has the equivalent of 40 lemons in the bottle for less than $4.  It is by far the best bottled lemon juice I've purchased.  I have been using it for about a year, but I've been paying over $6 a bottle.  I figured that I saved enough on the lemon juice I use in a year to pay for my Costco membership and then some!!!
Previously I used a case of lemons in no time...squeezing, squeezing, squeezing....well, some things are just not worth the time in my book.  Some day I may go back to squeezing...but for now, this is what works best for me...and it is a relief on the pocketbook too.

Community Supported Agriculture~CSA


Last night we met with our local farmer that grows our produce for the CSA.

This will be our 7th year to support him and his family and reap the harvest of their labor and prayers. I can say that we have always been pleased with our produce and the quality of the veggies continues to improve year after year, not that they were ever bad. Our farmer continues to educate himself and has committed to not use any chemicals on our crops. He is not certified organic but grows organics and uses sustainable methods of farming. I encourage you to check out your local CSA and support them and enjoy the fruit of their labor.

The way ours works is that at the beginning of the season we give our farmer seed money and then for approximately 26 weeks of harvest we get a portion of produce that feeds a family of 4 who eat a primarly plant based diet. We also have access to several other items such as bakery, raw milk, raw milk cheeses, grass fed beef, organic free range chicken, eggs, handmade soaps, fermented drinks and veggies and such. We pick up our produce once a week and any other items we have ordered. The group I belong to also orders from United buying Club once a month and we do a group buy from a local organic produce supplier.

If you are not aware of anything like this near you, call your local health food stores and check out this site Local Harvest, CSA and get involved in your community and support your local farmer!!!
 
The CSA also offers opportunities to fellowship with like-minded people, whether it is on the topic of health, spirituality or family.  We share infomation on various subjects~from raising children to raising chickens....making new recipes....herbal remedies....we pray for one another....sometimes we pick up and deliver veggies to someone who's is having a conflict in scheduling....the list is endless to how we minister to one another as a community....
