Superfood Smoothie and Spearmint Tea

Ingredients for my morning Smoothie:
1 c. coconut water
1 kiwi
1 mango
1/2 banana
1 c. blueberries
handful of beet greens
2 handfuls of spinach
2 T. ground sesame seeds
1 t. Amazon Bliss
wheatgrass powder
Klamath Power3 (4 capsules)
2-4 T. Aloe Vera Juice
fresh ginger
Blend and add ice and blend again

Yummy!
The recipe above made about 6 cups.  I drank 4 cups and then went for a powerwalk with my daughter and one of the dogs.  When we got back I placed the rest of my smoothie in the blender and added 1/3 of a cucumber, 2 stalks of celery and some more ice for a recovery smoothie.

1 gallon of filtered water
large handful of fresh spearmint leaves
cap and sit in the sun for several hours

remove leaves when finished and add sweetener of choice...we like liquid stevia

Superpowered Breakfast Smoothie

I wanted something that would stay with me for awhile, so this is what I came up with.
I love smoothies because you can be so creative and never make the same one twice.

My Superpowered Smoothie
kale
parsley
arugula
pear
strawberries
hemp seeds
Klamath Power3
Wheatgrass
raw cashews
ground raw sesame seeds
vanilla cream stevia by Sweetleaf
ginger
and
water to blend
I made two smoothies...one for my son and one for me
the second one had blueberries in it..I had a bit leftover to I topped mine off with it

CSA Share Week #6


CSA week 6~starting top left and going clockwise~
Kale
Beets with greens
bag of mixed salad greens
4 summer squash
bag of shell peas
spearmint
chives
garlic scapes
parsley
kohlrabi
radishes

I could hardly wait to get started!
The radishes were intense. I ate a few and chopped some into the kale salad

KALE SALAD
1 bunch of kale
radished~diced
mini sweet pepperrs~chopped
chives~finely chopped
Chinese Five Spice to taste
 lemon juice
extra virgin olive oil
Himalayan salt
handful of raw pumpkin seeds

BEET SALAD
1 bunch of  beets
garlic~to taste..I use lots
lemon juice
extra virgin olive oil
Himalayan Salt
dash of ground cloves

Breakfast of Champions! Green Juice and Fruit Pudding

Green Ginger Juice
7 cucumbers
ginger
lemon juice
big handful of:
kale
dandelion
Kohlrabi green tops
liquid stevia to sweeten



I bottled two pints and then to the other quart I added wheatgrass, beet and carrot powder and mixed it very gently

 This is the finished juice after I blended in the powders.

Fruit Pudding
2 altaulfo mango's
4 large strawberries
pulsed in my Vita-Mix
topped with chia seeds

Cheezy Garlicky Swiss Chard is on the menu for today!
I also added diced kohlrabi, shell peas and dulse grandules the the salad.
Super yummy!

While surfing the net for info a I came a list of Gout Foods to lower Uric Acid...Gout Pal.com
Swiss Chard, kohlrabi, onions, celery, tomatoes are all on the list.
If you suffer with this condition eating lots of veggies would be a great benefit.

CSA Share week 4

I am late in posting this one.  I actually got these items last Wednesday.  Oh my, how time does fly!
We will be getting another portion tomorrow.

garlic scapes, green/spring onions, sugar snap peas,
kohlrabi, strawberries, bib lettuce, green ice lettuce, bag of mixed salad greens, asparagus, parsley and basil
This week we ate up the greens pretty quickly, so I supplemented with our own garden greens~kale, romaine, chinese cabbage, arugala and cilantro
Since we are three vegans and an aspiring vegetarian our veggies go quickly around here.  I used our fresh basil in Greek Salad's, the parsley went into some green juice I made..snap peas are finger foods and chopped up in salad, the kohlarbi is in the Pea Salad below...the only items left are a few green onions, some snap peas and the asparagus.


Pea & Kohlarbi Salad
1 bag of fresh or frozen peas
1-2 green onions
mini sweet peppers
Kohlrabi
cumin to taste
black pepper
lemon juice
olive oil

Breakfast Fruit Salad
mango
pineapple
strawberry
banana
unsweetened coconut
pecans

Best Blended Salad, Cashew Cheese, Raw Chips & Strawberry Julius

I love Mango season!   I get to make my favorite blended salad.

The peppers and snap peas are to place on the table for snacking!...along with the cucumber.  What's on your table?
Remember to have plenty of fresh fruits and veggies at hands reach for your family...and they will eat them.

Best Blended Salad
1 Ataulfo mango
(my favorite, but you could also use another variety)
3 small vine ripe tomatoes
mixed salad greens
2 swiss chard leaves
small handful of cilantro
1 1/2 c. celery
3/4 of a large cucumber
jalapeno peppers to taste
lemon juice

Blend to desired consistency
This made a full Vita-Mix container or about 2 quarts
and I topped mine with granulated dulse flakes

Blended soups and salads are easy to digest, filling and delicious.  You can make them any consistency you like...smooth for a soup or chunky so you have something to chew.  Leave out the fruit for a savory soup or salad...use whatever greens or salad fixin's you have on hand, change up your spices/seasonings, add avocado for a creamy soup or salad.or chop it into the bowl..be creative....if I think it might be too bitter I add jalapeno and it usually cuts right through it.
For the dressings I usually add the ingredients right into the blender...for instance...tahini, lemon juice and Bragg's Liquid Aminos is good....or for Italian...garlic, oregano, basil, dash of Olive oil or leave out the oil and use an avocado for the fat.  Sometimes I'll look at salad dressing labels of things I used to eat and create one of my own from their ingredients list that I modify.


This is just off of my front deck.  It is the only place that we have enough sun to grow anything..but we do not get much sun, so I cannot grow much, but I keep trying.  This year I am doing some greens...kale, chinese cabbage, romaine, arugula in the raised bed and some herbs in pots... I am snipping off cilantro for my salad.

Cashew Cheese, Blended Salad, Raw Nacho Chips

Cashew Cheese
in the Vita-Mix
1 c. soaked and drained raw cashew
1-3 cloves of garlic
1-2 T. dried onions
lemon juice to blend
Himalyan Salt to taste

blend until smooth
I made this Cheese the other day and had not tasted it...Wowzer...it is so good...
I did not measure anything...you know what I mean??? I love the versatility of raw food un-cooking...!

Strawberry Julius
2- 2 1/2 c. water
big handful of CSA strawberries
lemon juice
Squirt of liquid Stevia
small handful of ice
Blend in high powered blender or Vita-Mix
Enjoy!
you can change this up by adding whatever fresh or frozen fruit you enjoy...

Week 3 CSA Share and Mimi Kirk's Raw Cookies!

The picture above is my full CSA share with the exception of some missing strawberries. I was cleaning them when I realized I had not taken my pic for the week's share.
Starting in top left corner and going clockwise:
Purple kale
bag of mixed salad greens
lemon balm & apple mint
sorrel (is hidden)

This picture includes more of the same.  I was generously gifted by a friend of ours that will be leaving the country to go on a mission trip.

Purple Kale Salad
2 bunches of kale including stems
(the stems were sooo tender and tasty I chopped them up and added them to the salad)
1 bunch of chives including the tops
8 mini sweet peppers diced
1 bulb of garlic
handful of diced celery
EVOO
lemon juice
Bragg's Liquid Aminos
drizzle of toasted sesame oil
dash of Himalyan Salt
1 c. soaked and drained pumpkin seeds

Mimi Kirk's book, "LIVE RAW" ~  came in the mail last week!....it was autographed and a special dog tag necklace was included.
Mimi was voted the sexiest vegetarian over 50 years old in 2009!  In fact Mimi is 72!
Great book Mimi! The pictures are gorgeous and the slick pages are wonderful to have while working in the kitchen...just in case of a spill.
This book is full of yummy recipes and tons of information.
I caught Mimi's Video a couple of weeks ago on how to make raw cookies...so I HAD to make them.
I modified my recipe by using coconut butter instead of coconut oil and added vanilla.
I ate too many!
