CSA Extra's~ Sunburned Bell Peppers and Green Lemonade

Last week I was blessed by the extra's that no one wanted from our CSA.  In the brown bag are 2nd bell peppers, some are sunburned.  Follow my link for more information about these peppers and their benefits. In front are hot peppers.  Time to freeze and dehydrate.  I was able to salvage and freeze 3 one gallon baggies of whole bell peppers for stuffing at a later date.  The hot peppers I dehydrated for about 3 days before they were ready to store in glass jars.

CSA Share Week #15 out of 25 and No Bake Brownies

For any new readers out there~ I have been posting pictures of my CSA (Community Supported Agriculture) share each week so that you can see what typically come in a share.  For more information on CSA's or to find one in your area go to Local Harvest.org .

I had some sweet corn leftover from my other CSA share that needed to be used up.
This is what I came up with....

Skillet Steamed Corn
6 ears of sweet corn cut from the cob
2-3 red bell peppers
1 medium sweet onion
small handful of cilantro
1 t. extra virgin coconut oil



I had a delivery from Amazon yesterday.  I received couple of items I like to have on hand~
Raw Cacao and NutriBiotic Protein Powder
My husband takes protein smoothies to work and well....I need my cacao (raw chocolate)
I use it to make smoothies, no bake brownies

CSA Share Week #14 out of 25!

Top left:
variety of bell peppers, Hungarian peppers
dill top~you can barely see this one
Heirloom tomatoes
grape/cherry tomatoes
sweet onions
carrots
butternut squash
okra
parsley
celery cuttings

Raw Refrigerator Pickles


Refrigerator Pickles

RAW SWEET PICKLES

In a bowl:
place sliced cucumbers
red bell peppers
sweet onions

In a small saucepan mix:
1/2-3/4 c. rapadura
2 t. Himalyan Salt
1 c. Bragg's Apple Cider Vinegar
1/2 t. celery seed
(I was out so I used celery tops in my veggie mix above)
Place on stove and warm until rapadura is incorporated.  Do not exceed 105 degrees.

Pour liquid over veggie mix and place in jars then add enough water to fill.  Shake and place in fridge for a few days or leave on counter covered with cheesecloth for 3 days and then place in fridge


RAW DILL PICKLES
(original recipe was given to me by my friend Lisa and it was not raw~I made some modifications)

In a gallon glass jug place:
3 dill heads on the bottom

Slice cucumbers lengthwise and stack in jar
top with:
1 sliced onion and
1t. mustard seeds
3 dill heads

In a sauce pan warm up:
2 c. Bragg's Apple Cider Vinegar
6 c. water
 3 T. Himalyan Salt

Pour over cucumber mixture, cover with cheesecloth and let sit on counter 3 days then refrigerate.
Wait about one week for them to soften up or eat while crisp

Basil Pesto and Veggies!


We have been getting fresh basil in our CSA share most weeks. This morning I was craving pesto, so it was a great way to use it up.

Basil Pesto

In Vita-Mix, food processor or Magic Bullet place:

small handful of basil
small handful of pine nuts
1 large clove of garlic
dash of Himalyan Salt
splash of lemon juice

Blend until smooth and enjoy!
You can use this as a dip, mix into zucchini noodles or as a spread on raw crackers

Refreshing Fruit Pudding~Salad

1 very ripe banana
1/2-3/4 c. frozen blueberries
2 celery stalks
small handful of raw walnuts

 Blend in Vita Mix on #6  and left it with a little crunch. You may blend until desired consistency is achieved.

Stick Bugs, Bell Peppers, Cukes, Zukes & Kombucha!

  That is my teenage daughters hand next to it.  It was quite large and fun to watch.
We just had to have a picture.

A couple of weeks ago I received several 2nd bell peppers from my CSA.  I juiced some, ate some and dehydrated most of the overflow.  I just place them into my food processor after cleaning them.  This really saves time.

I had 6 small jars of dried peppers to store!
They made the house smell wonderful.

My generous neighbor blessed me with this bowl of zukes and cukes.
I juiced most of them.

Rawdawg Rory had a great post on growing your own Scoby and I have had this in my fridge for several months waiting for the opportunity to grow my own.  When Rory posted his own adventure, I thought I'd get on with my own.



I used green tea and rapadura for mine.

This is day one July 29th, 2011.  I prepared my tea and waited to it to cool then poured my scoby baby into the mix, covered it up and waited......

Day 17~ August 14th.
I took several pictures from different angles.


You can see my scoby baby hanging down from the new scoby that is developing.

waiting.......... I'll post more pictures as this scoby develops.
It smells very acidic right now....and it looks healthy!

Lunch on the Go!

Lunch on the Go

In Vita Mix:
1/2 c. water
1 large orange heirloom tomato
1/2 bunch of celery
1 red bell pepper
1 red jalapeno
1 mango
big handful of romaine lettuce
lemon juice
cilantro

Blend until desired consistenecy.  I like mine with a little chew left in it.  I sprinkled granulated dulse on the top and grabbed a bag of crispy dulse to go!

I am on my way to the beach, so I am also taking a container of watermelon for later.

Cheezy Kale Chips, Beet Salad & Tabbouleh

CHEEZY KALE CHIPS



                                                                                                                                                                                                                         
2 bunches of Kale washed and large stems removed~place in a bowl and sit aside

In a blender or Vita-Mix  add:
1/4 c. Bragg's Apple Cider Vinegar
1/4 C. Bragg's Liquid Amino's
1/2 c. filtered water
*you may need a little more water~you need to be able to pour this out of the blender,
but you don't want it runny.
3/4 c. Tahini
1 garlic clove
2 T. dried onions
1/4 t. sea salt
1/4 c. nutritional yeast

Blend until smooth, pour over kale and massage dressing into kale.
Place on Teflex sheets in dehydrator and dehydrate for 6 hr @ 115 degrees.

 

Today's green juice was an endeavor to clean out the fridge.

This juice was extremely GREEN!!
This made one gallon of juice



Beet Salad
1 bunch of raw beets shreddeed
2 large garlic cloves
dash of ground cloves
salt
1/4 c. lemon juice
1/4 c. extra virgin olive oil
Mix in a large bowl and allow flavors to marinate before eating.

Did you know that  CLOVES neutralize garlic breath?
Remember clove gum?
I used to love it!
This is not garlic clove. 
Cloves are sometimes used by the dentist to pack a dry socket when in pain.

Tabbouleh
1 bunch of parsley chopped fine
1 bunch of celery cuttings chopped fine
2 small sweet onions diced
2 bell peppers dicd
4 cucumbers seeds removed and diced
2 c. soaked bulgar
4 t. spearmint
black pepper
Himalyan salt
6 T. lemon juice
6T extra virgin olive oil
