Cacao Fudge, Salads, and more Salads...

Lunch Time~
I've been in the kitchen most of the morning and had to take a break.  I will juice after lunch, clean up and go work out.  :)
On my plate today is: Beet Salad topped with raw sunflower seeds, Cauliflower Salad, Kale Salad and on topside is another one of Ani's Hemp Sun Burger's with Mustard and a piece Sesame Flax Bread.



BEET SALAD
2 bunches of beets~peeled and shredded
6 garlic cloves
1/4 c. olive oil
1/4 c. lime juice
sprinkling of ground clove
salt to taste

Saving my tops for juicing

KALE SALAD
2 bunches of curly kale
1/2 red onion
handful of raw pumpkin seeds
4 garlic cloves
1/4 c. lime juice
1/4 c. olive oil
3-4 T. Bragg's LIquid Amino's


Set up for Juicing~
2 bunches of beet tops
5 cukes
3 bunches of celery
bowl full of kale stems, broccoli stems, cauliflower greens
I will add approx. 1 c. lemon juice
5-6 granny smith apples
big piece of ginger
and enough stevia to taste good to me
I'll be juicing my greens in my Greenstar...and the pulpy stuff in my Jack..you can see my nut milk bag in the pulp catcher...it is quicker this way and it keeps for about 3 days

Cheezy Kale Chips

2 bunches of Kale washed and large stems removed
place in a large bowl
In a blender or Vita-Mix blend until smooth & then pour over kale and massage until completely covered
1/4 c. Bragg's Apple Cider Vinegar
1/4 C. Bragg's Liquid Amino's
1/2 c. filtered water
*you may need a little more water~you need to be able to pour this out of the blender
but you don't want it runny.
3/4 c. Tahini
1 garlic clove
2 T. dried onions
1/4 t. sea salt
1/4 c. nutritional yeast
Place on Teflex sheets in dehydrator and dehydrate for 6 hr @ 115 degrees.

 


Dessert....
Cacao Fudge
1 c. raw walnuts~grind into flour
add: 1 c. pitted dates...one at a tim until mixed into nut mixture
add: 1 c. raw cacao
dash of salt
process until it sticks together...you may need to add a bit of water to get fudge consistency..add very slowly though, so you don't get a sticky, globby mess..
top with cacao nibs and place in fridge for 1 hr.

I also made a batch of Carob Fudge by substituting carob in place of cacao...
I made this for my hard core raw vegan son.... :)

Review of Ani's Raw Food Essentials, Chinese Cole Slaw and Red Green Juice

This is a picture of my mid afternoon meal today.  I've been hanging in the kitchen today...preparing raw crackers and breads...veggie burgers and salads.
On my plate is a Hemp Sun Burger with Mustard...on Salted Flax Cracker from Ani's recipe book pictured in the background.  I have made two double batches of these recipes..and added my own modifications to them....I cannot say enough about this book and the recipes...Ani's Raw Food Essentials.  The recipes I have tried are delicious, easy to prepare...with few ingredients.  I have been coaching a couple of friends about raw foods...and of all the raw food recipe books I have and use...this is one of the top one's I would recommend!
I can hardly believe this ridiciously low price for what you  get.  I purchased mine at the Half-Price Bookstore and paid almost $13 for it....and it was still worth it!  I would put the value on a book like this up in the $20 range..when comparing it to all of the raw food books and un- cookbooks I've purchased.  It is a hardbound book, 324 pages of information...

as you can see this books has it all...it even has several basic recipes that you can use to create your own recipes according to your tastes or desires....for instance..she gives a basic cake recipe...you can add cacao...for chocolate...spices to make a spice cake...or whatever flavor you want....as you can tell I Love this book...and by the way ~~Ani is not asking me to promote it....nor do I get any compensation from Ani for promoting it...



This is a picture of the Hemp Sun Burger and Salted Flax crackers from Ani's book I have dehydrating...on one of the trays of crackers I left it a bit thicker and topped it with sesame seeds to use as a bread...I also added some grape tomatoes to her recipe. I will flip the mixture over when it is dry enough and score accordingly and continue to dry to desired crispness

Here I am in the process of making two different salads
in the bowl is shredded green cabbage and shredded carrots, diced celery is on the counter

I have divided the cabbage mixture and added celery to only one bowl
I will mix in the celery and store that mixture to make Cabbage Slaw . This is a great way to be prepared for salad days ahead.  This slaw uses avocado and jalapenos, nutritional yeast and veggie broth powder..it is very filling and a favorite at my house.

With the other bowl of cabbage I made
CHINESE COLE SLAW
about 1/2 head of cabbage shredded
1 c. raw cashews
1 c. raw sunflower seeds
1 bell pepper diced (not shown)
1 carrot shredded
1 bunch green onion diced
3 T. Seitenbacher Veggie Broth and Seasoning Powder

DRESSING
3/4 c. extra virgin olive oil
1/3 c. raw apple cider vinegar
1/4 c. water
pinch of stevia
mix in blender & pour over salad mix




This is not Kombucha...it is my

Red Green Juice Blend
1 bunch of celery
1 bunch of beet tops
2 beets
1 bunch of kale
3 broccoli stems
5 cukes
6 granny smith apples
big piece of ginger
1 c. of lemon juice
I also added some leftover collard stems, kale stems and the greens from the outside of a cauliflower...waste nothing I say...if it is green juice it....whenever I make something with the items above or similar items I place the unused portions...like stems and such in a container and juice them at juicing time.

My Favorite Raw Pizza~

Rawpuchinno

32 oz of Green Juice

Mid day~
1 1/2 c. Blended Soup~yesterdays leftover blended salad..blended until smooth and topped with shredded carrots

Raw Pizza
Raw crackers, smeared with Macho Nacho Sauce~topped with marinated portabella mushrooms (1/4c Braggs, 1/4 c extra virgin olive oil, dash of cayenne)
sprinked with shredded carrots (I gleaned my idea from "How We All Went RAW"~uncook book)the recipe is in yesterday's post, just scroll down a bit.

snack~
2 Celery stalks stuffed with grape tomatoes and sprinked with granulated dulse
followed by a Dandy Blend Rawpuchinno

dinner or whatever?
blue corn chips with Macho Nacho Sauce

strawberries & Kombucha Tea~GTS gingerade, my favorite




Green Juice
2 bunches of celery
1 bunch of Rainbow Chard
2 carrots
4 lemons
1 lime
ginger
stevia


I worked on my Yoga certification for a while today and got to practice YOGA during my studies.
I was a little stressed today and ate a small handful of organic jelly beans. I had purchased them this past weekend for my kid's. If I don't have that stuff in my house I don't eat it.. but.. oh boy, if it is here and the conditions are right (like today) I don't think. It really didn't hurt me, but I prefer not to indulge in that kind of stuff because it can lead to other not so healthy cravings. Sugar also compromises the immune system. Check out the link on the side bar. 76 ways sugar can ruin your health "THE DANGERS OF SUGAR".
It is so important to keep our immune systems strong especially during flu season and one way is to eliminate sugar. Tomorrow is another day.......

Cheezy Kale Chips, Southwest Chipotle Crackers~Saturday & Sunday

SUNDAY~

rawpuchinno

valencia orange
walnuts
16oz green green juice

blended salad~celery, tomato, cilantro, romaine, 1 red bell pepper, 6 baby carrots,tahini, garlic clove, dash of sesame oil and sesame seeds
seed crackers

rawpuchinno

1/3 c. veggie chili with a handful of shredded carrots mixed into it


I am dehydrating some kale chips and southwest chipotle crackers and I made some red/green juice

CHEEZY KALE CHIPS
Ingredients:

2 heads of Kale, Washed and Torn~SIT ASIDE

3/4 cup Tahini
1/4 cup Tamari
1/4 cup Cider Vinegar
1/2 cup Water
1/4 cup dried onions
1 clove garlic
1 lemon (juice of)
dash of Sea Salt
1/3 cup of nutritional yeast

Blend everything but the kale until it is creamy and pour over kale and massage into it and let it sit for 10 mins.
spread on Teflex sheets and dehydrate at 115 until crispy.
I had some leftover sauce so I cleaned and de stemmed some rainbow chard and used the rest of it on it. I'll let you know how it turns out.


Red/Green Juice

1 bunch of celery
bunch of beet tops
1 bag of spinach
4 lemons
1 lime
ginger
chunk of fennel
liquid stevia


Southwest Chipotle Raw Crackers

Pulp from the juice above
handful of shredded carrots
golden flax seeds
sesame seeds
sunflower seeds
oregano
basil
rosemary
nutritional yeast
dried onions
southwest chipotle seasoning from Mrs. Dash
sprinkle of salt
soak water for seeds

mixed together and spread on Teflex sheets. Score into the size you want.
I do not measure but I smell the mixture until it has the aroma I desire. I am
dehydrating this along with my kale/chard chips at 115 until partially dry and then turn them over and remove the teflex sheet to desired dryness.






SATURDAY~
rawpuchinno (water, 1 t. instant organic coffee, almond butter, banana, honey & ice)

15 oz green juice (celery/kale)

blueberries, blackberries & walnuts

salad~10oz romaine with green goddess dressing

rawpuchinno~water/almond milk,dandy blend, almond butter, banana, raw cacao, honey/agave & ice

seed crackers and 1/4 c. hummus

Weekend indulgences

I feel a little off balance from my eating this weekend with non-vegan foods. I am not getting satisfied with my meals as I usually do. Therefore I have eaten more today than I feel comfortable with.

Monday

Rawpuchinno

Green/Red juice 16oz

blended salad~romaine, radicchio, alfalfa sprouts, 1 tomatoes, 3 baby carrots,1/4 red bell pepper, fennel, nutritional yeast, chia seeds, water

1 banana, carob syrup & walnuts


blended salad~romaine, radicchio, alalfa sprouts,3 baby carrots, fennel, piece of red bell pepper, nutritional yeast, water, topped this mixture with some beet salad and had some organic sesame blue corn chips
10 almonds

I prepared my kids some pasta with vegan meatballs & steamed brussel sprouts
so I tasted...3 meatballs and a couple sprouts

Red/Green Juice

1 bunch of celery
1 bunch of beet tops
1/2 bunch of cilantro
1 cucumber
2 carrots
2 lemons
1 lime
fennel
ginger
stevia
2 c. water

Exercise today: 33 minutes on the rebounder
